Breakfast Casserole

Reviewed: Aug. 12, 2007
My whole family, including a 4 year old and 2 year old liked this quick recipe. Thank you! Next time I will add some sauteed onions and maybe some more herbs to the egg mixture.

Vegetable Pasta Salad I

Loved using frozen veggies--so easy. Needs a lot of spices like seasoning salt. Best if it sits and marinates for awhile.

Great change from regular spagetti. My five year old loved it. We topped it with shredded cheddar and mozzarella cheeses.

Pasta and Vegetable Saute

Reviewed: Jul. 4, 2007
It was a yummy healthy way to top off some whole wheat pasta. I didn't have red pepper, so I added some celery instead. I also spiced it up a bit more. My 4 year old gave it a thumbs up!

Chocolate Zucchini Cookies

Reviewed: Aug. 17, 2007
This is a yummy cake like cookie! I used butter substitute for the shortening, added about 1/4 cup more zucchini, and some chocolate chips. They are a little doughy right out of the oven and so good!

Yum. Added some choc chips. Used one cup oil. Next time try 1/2 and 1/2 on the flours.

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Reviewed: Jul. 20, 2008
Great healthier muffin recipe. They aren't too heavy, but lighter than expected. I used 2 bananas and the added 1/2 cup oats. Instead of strawberrries, I used a cup of frozen mixed berries. I made sure to mash them up so I wouldn't end up with soggy chunks. It worked out perfectly! YUM!

Pumpkin Chocolate Chip Cookies III

Reviewed: Jan. 30, 2008
This was an easy recipe--it took no time at all. Just a note that it is a VERY CAKELIKE cookie. Nice and poofy upon baking and tasty.

Amy's Barbecue Chicken Salad

Reviewed: Jan. 8, 2008
Great version of a Southwestern Salad! The dressing sounded iffy, but my husband really loved it. It was a little thick for my taste, I'll thin it next time. I didn't have any corn, so substituted red onion at the last minute. Used a regular head of iceberg since that's what I had. Didn't top with onions or chips to keep it healthier. My husband really loved it!
