Pasta and Vegetable Saute

It was a yummy healthy way to top off some whole wheat pasta. I didn't have red pepper, so I added some celery instead. I also spiced it up a bit more. My 4 year old gave it a thumbs up!

Pork Steak Burritos

Great tasting super quick recipe! I added some shredded cheese and with our hot picante sauce salsa the flavor was great. I used ww tortillas and it was awesome!

Zucchini Herb Casserole

Great recipe. I wanted to make it more of a meal, so I added over 2 cups of cooked brown rice. I also browned some chicken breast, cut it up and added it. I used bery little cheese and just sprinkled parmesan on top right before eating. I also added lots of seasoning to taste. It was a really yummy dinner, even my 22 month old ate it all right up!

Breakfast Casserole

My whole family, including a 4 year old and 2 year old liked this quick recipe. Thank you! Next time I will add some sauteed onions and maybe some more herbs to the egg mixture.

Chocolate Zucchini Cookies

This is a yummy cake like cookie! I used butter substitute for the shortening, added about 1/4 cup more zucchini, and some chocolate chips. They are a little doughy right out of the oven and so good!

Amy's Barbecue Chicken Salad

Great version of a Southwestern Salad! The dressing sounded iffy, but my husband really loved it. It was a little thick for my taste, I'll thin it next time. I didn't have any corn, so substituted red onion at the last minute. Used a regular head of iceberg since that's what I had. Didn't top with onions or chips to keep it healthier. My husband really loved it!

Saucy Chicken and Asparagus

Yummy recipe! The sauce was really tasty as is. We season salted, peppered, and onion salted the chicken breats when browning. The asparagus was way too soggy for me and I didn't cook it beforehand either. I will steam it next time and just add it to the meal.

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Great healthier muffin recipe. They aren't too heavy, but lighter than expected. I used 2 bananas and the added 1/2 cup oats. Instead of strawberrries, I used a cup of frozen mixed berries. I made sure to mash them up so I wouldn't end up with soggy chunks. It worked out perfectly! YUM!

Spaghetti with a Kick
