Chocolate Chocolate Chip Cookies I

This cookie is quickly becoming one of my most requested recipes. I've made it for a girls' softball team, bake sales and family get-togethers. It tastes like a brownie. Make sure to bake them long enough otherwise they fall apart. I always add Mini M&Ms as well as the chocolate chips! Absolutely sinful!!!

Seven Layer Salad

This salad is a wonderful stand-by for summer birthdays, barbeques and all of the different get togethers! It is one of my husbands favorites and he requests it often during this time of the year! I usually make it the day ahead so there is time for the flavors to blend.

Ambrosia Fruit Salad

This recipe reminds me of a salad my grandma made while I was growing up! I left out the cinnamon and nutmeg and added about 12 ozs. of Cool Whip and 1 3/4 cup coconut! My guests loved this easy and simple recipe!

Sour Cream Refrigerator Mashed Potatoes

These are very good mashed potatoes--even reheated days later! I added some milk-maybe 1/8 of a cup and more sour cream. These had a great taste and were very creamy. What is so nice about them is that you can refrigerate them and put them in the oven as needed!

Corn Casserole II

This corn cassrole reminded me of scalloped corn my grandmother made when I was younger! It was wonderful! I almost couldn't get enough during dinner and my husband ate all of the leftovers the next day! It was 'jiggly' in the middle when I took it out of the oven, which made me wonder what I did wrong, but after about 10 minutes it sat up and turned out wonderfully!

Apple Butter Pork Loin

I made this pork loin for a Sunday dinner for my new in-laws. It turned out GREAT! I did marinate the pork loin in the apple juice, with the apple butter mixture on top, overnight. I baked it in a 350 degree oven for 90 minutes. It was great while company was here because I could take it out of the refrigerator and throw it into the oven. The pork was very, very moist! It has a nice spicy flavor that was not too overpowering but it was just enough. I've added this recipe to my collection!
