This was very tasty! I didn't have any butter on hand so I substituted Crisco and they turned out great.

Mexican Chicken Soup

This was so good and full of flavor! I poached the chicken in water with a little taco seasoning and then made some boil-in-bag rice in the same broth I cooked the chicken in. I also added garlic, the juice of a lime to the soup and used lime to garnish the soup as well.

Orzo with Parmesan and Basil

Excellent dish! I never really knew how to prepare Orzo, but I will definately stick with this method!! I used reduced fat cheese and light butter to reduce the calories a bit. I also left out the basil. It was yummy!!!

Cheesy Catfish Chowder

Yummy!! I followed the recipe exactly and this was an awesome stew!! I used 2% Milk Cheese, 1% Milk, and Light Butter to make it a little lower in calories. This is a wonderful stew for a cold evening or for tailgating! Don't change a thing!

Southwestern Style Fifteen Bean Soup

The only thing I changed was to add a can of stewed tomatoes per the package instructions. I also purchased a mix that included a cajun seasoning packet, so I added that as well. I used a pound of center cut ham - diced it up and left the bone in the soup to add more smokey ham flavor!

Cajun Pecan Catfish

This was delicious! I wanted to do something other than the traditional fried catfish. Very flavorful! I served it with cajun red beans & rice and my husband and I loved it!

Buffalo Chicken Dip

This recipe is awesome! I took this to a work party and everyone raved over it! My hubby also LOVES it, wings are his favorite. I used Fritos Scoops and celery - the Fritos are so yummy with it..they're a nice sturdy chip so you can scoop up a good bit of dip! The only thing I'll change next time is the canned chicken - I just really don't like it. I'll boil chicken breasts and shred the meat instead.
