Cheryl's Spinach Cheesy Pasta Casserole

This recipe was really yummy. I followed the recommendation of previous reviews and added ricotta cheese in the cheese layers, used fresh spinach sauted with lots of minced garlic, added dried oregano to the egg mixture, and added sliced provolone cheese to the top. I baked covered for 30 minutes and uncovered for the last 15 minutes. Served with mixed greens with sliced olives, chick peas, and artichoke hearts with store bought Italian dressing. A yummy vegetarian meal. Oh, also substituted soy pasta for regular pasta as we are trying to stay away from wheat as much as possible. It's a little weird in texture, but worth the "goodness" as it provides lots of protein :) Thanks for a great recipe!

Mexican Bean Pie

Not sure if I made this right as it stacked up like a layer cake. Could have put it on a cookie sheet rather than sided pan as it never touched the sides. Used veggie product shredded cheese as trying to stay away from dairy whenever possible and turned out just fine. Made a beautiful plate presentation because it sat on the plate like a piece of layer cake and could see all the layers. Drizzled salsa over top and garnished with slices of avocado. Very colorful and delicious! Looking forward to making again.

White Bean Soup

Yummy! I took the advice of some previous reviews and made a few changes...three cloves of garlic, 2 carrots, 2 cans of chicken broth, 2 cans of white beans, 1 box of frozen chopped spinach, no summer savory. Didn't want to buy summer savory for only this recipe so skipped it. Not sure what I might be missing with skipping that - oh well. I cut up two Roma tomatoes and that wasn't quite enough. Will do 4 next time. Used had blender to thicken right in the pot so could skip the cooling off step - LOVE the hand blender!! Will definitely make again. Thanks for the great recipe! And a wonderful web site :)
