Mini Meatloaves

Only substitution I made was to use ground turkey, everything else was exactly as written. My entire family loved them, and most importantly my 4 and 2 year old gobbled them up and ate leftovers the next day. Oh, and I did bake them in a muffin pan for mini meatloaves. I think I cooked them just about 1/2 hour but not positive. Definately making these again.

Low-Fat Blueberry Bran Muffins

Made these 2x now and they are great. I add flax seed for an extra nutrition boost. First time I made w/ diced apples instead of blueberries and I think I like it better that way, add a pinch of cinnamon too. Really can try any fruit you want.

Spring Biscotti

A friend made this recipe for New Years brunch and they were AMAZING!! I don't particularly care for biscotti but these have made me a convert. This is the recipe she followed exactly except she did top them with melted white chocolate. DELISH!!

No Bake Peanut Butter Pie

Delicious! Everyone at my party loved it and asked for the recipe. Update 4/2011: I've since made this recipe 3 different times all following the recipe exactly except always subsituting low fat cream cheese, milk and whipped topping. Great recipe for the upcoming summer!

Winter Fruit Salad with Lemon Poppyseed Dressing

I have made this numerous times and this always gets RAVE reviews. You can definately vary the lettuce and fruits. Big tip is I use splenda as a sub for the sugar and you can not tell one bit.

Slow Cook Thai Chicken

Made this for a family dinner tonight and EVERYONE loved it! Will definately make again, but might need a few tweeks. Some added spice to theirs, others thought it was too peanuty, but all liked it overall.

Chicken Satay

My guests raved about these! My girlfriends do a different ethnic food every week and we play around with new recipes. This week was Thai food and these were the first items to be eaten! I did use the red chile saracha (sp?) sauce instead of regular hot sauce.

Buttermilk Pancakes I

These were so easy to make and so delicious. Very light and fluffy. Half way through eating them, my husband (whom doesn't comment on anything I cook) perked up and said "these pancakes are REALLY good!" That made my day! Plus, the ease of making them made it so much better.

Broccoli with Garlic Butter and Cashews

I've been making this for 6 years or so and realized I've never reviewed it. This is my family's absolute favorite way for me to make broccoli. It's rich so I do it as a treat but everyone loves it. Try it!

Brown Sugar Meatloaf

This was the best meatloaf I've had in years! I followed others advice and made meatloaf cupcakes in order to speed cooking time (and made it easier for serving to my 2 year old). I did put sauce on top AND bottom as suggested and I added worstechire sauce to the sauce.

Fiesta Fry Pan Dinner

This was really delicious. My picky picky husband even went back for seconds! I was short on time and ingredients so I left out the zucchini and onion, but it was still great without it. Will definately try again.

Best Big, Fat, Chewy Chocolate Chip Cookie

I would give this recipe more than 5 stars if I could. I have been making these cookies for about 2 years now and I finally am giving it a review. I have received SOOOO many compliments on these cookies. People actually don't believe they are homemade...seem like Mrs. Fields cookies. Just a hint, you can totally substitute all or partial Whole wheat flour if you want. I think it works best with 1/2 white flour and 1/2 wheat if you do choose to substitute. Definately try this recipe, you won't be disappointed!!!!

Easy Sausage Strata

This was so easy and very good. I used turkey bacon in place of the sausage. Next time I would not add any additional salt as the bacon was salty enough. Also, I wasn't sure whether to cook it covered or uncovered since it didn't specify. I cooked it covered b/c I didn't want to burn the cheese and it was a bit soggy in the middle..cooked but soggy. So next time I might uncover it for the last 15 min or so to try to firm it up a bit as my family prefers our eggs very well done. Definately try again for company.

Chocolate Eclair Dessert

My mom used to make this recipe years ago before it had an official name, but this is the exact recipe she used. This has always been my favorite. A little tip though, you have to make it a day ahead, possibly even two and it is just that much better.

Cranberry Swirl Coffee Cake

Very good. I have made this twice now and the 2nd time I used slightly less almond extract than called for just due to personal preference. This recipe gives you a moist cake that I was able to make into a loaf and freeze. It thawed beautifully and tasted just the same as fresh baked.

Slow Cooker Sweet and Tangy Chicken

Used Sweet Baby Ray's Honey BBQ as so many reviews suggested. I halfed the recipe and used 1/2 the can of pineapple chunks and juice. My husband w/ a major sweet tooth said it was almost too sweet and would be better next time w/ regular bbq sauce. Other than that we thought it was great, the kids (2 & 4) both gobbled it up. Served over jasmine rice, added pineapple chunks, red pepper, carrots and pea pods 1 hour before finishing. Will make again.

Easy Manicotti Florentine

My family and I did like this, however it did need much more sauce than stated in the recipe. I would say 3 cups spaghetti sauce if you don't want any crispy spots on your noodles. The filling was tasty, I did add about 1/4 tsp garlic powder for flavoring and you could add whatever else suits your tastes. Didn't make enough for the whole box of manicotti but it was just right for my family of 4. Used part skim ricott, low fat cottage chz and LF mozzarella and w/ the spinach it's not too bad on the health factor either. Will make again but with more sauce.

Slow Cooker Marmalade Curry Chicken

Great recipe. followed other reviews and added coconut milk. Would've given 5 stars if recipe was written w/ that in it. So easy, tasted great, and leftovers were gobbled up by coworkers. Everyone asked for the recipe.

Fire-Roasted Tomato and Spinach Pasta

4 stars b/c this was SO easy and tasted pretty decent. I did add shrimp and broccoli to it but other than that followed the recipe exactly. My husband said it was bland but he doesn't eat shrimp or tomatoes and those 2 items gave it most of it's appeal. My 4 yr old & 2 yr old licked their bowls clean so that's a winner to me, and did I mention this was SO easy?

Non-Edible Cinnamon Ornaments

These were pretty easy, but I only gave it 4 stars since these definately need more applesauce than it calls for. I rolled them out on wax paper and after the 1st batch, they were so dry and crumbly I couldn't get any more out of the batch. I ended up with only 5 useable ornaments. Good basic idea and my 2 year old enjoyed it.
