Flourless Oatmeal Blueberry Pancakes
These were delicious! My husband thought thy were too grainy, so next time, I may try putting the dry ingredients in the food processor. I thought they were very good, though. I did not have the coconut oil, so I used canola oil and added a little bit of coconut, which tasted great. I also used 2 extra large eggs instead of 4 egg whites. It worked just fine. I would definitely make these again.

Grilled Tuna Steaks with Dill Sauce
I enjoyed this recipe. I did not have white wine vinegar, so I used red wine vinegar. Also, I only had 1 tbsp dill. Overall, I thought the recipe was a 4-4.5. My husband didn't like it quite as much and gave it a 3.5-4. I would make it again. I had frozen tuna steaks, so I made them medium well. If I had fresh tuna steaks, I would have done medium rare, which would have improved the overall taste in my opinion.

Thai Peanut Dressing
I was looking for a quick Thai peanut salad dressing. I was doubtful as I was making it but was definitely pleased with the outcome. I wanted more of the salad so I could have more dressing! I did not change the recipe at all.
