San Francisco Pork Chops

Restaurant flavor and so simple. I added a little extra beef broth and only simmered 20 minutes, really depends on thickness of chops. The extra sauce while still hot was drizzled on aurugla and plated with the chop. Served with olive oil garlic herb angel hair pasta. Really good, even if it is salty.

Mom's Paprika Chicken with Potatoes

I wasn't expecting much as making this was a last minute decision. I used boneless skinless chicken breast and a full tbs of paprika. Wow, what a surprise my family loved it. Super easy and the left overs were even better.

Minute Steaks with Barbeque Butter Sauce

I have made this three times. Each time I used a different sauce, A1, teriyaki, and Sweet Baby Ray's barbecue. I liked the barbecue the best. My cut of meat was called chuck tender steak and it worked perfectly. This a new favorite because everyone loved it. 5+ stars and by the way we do 2 minutes per side, anything less was too rare for our tastes.

Strawberry Cinnamon Oatmeal Muffins

I really liked these muffins. They weren't overly sweet or too oily. I did use canola oil because I just couldn't use olive oil due a previous disaster using it in brownies. Other than the oil everything was the same. I did find 17 minutes in the oven was almost too long. Next time I will do 15 or 16 minutes.

Yellow Squash Casserole

Absolutely delicious as written. The only alteration I did was to melt the 2 TBS of butter and mix that with the topping instead of using dots atop the casserole. However, next time I will use reduced/fat free ingredients.

Mexican Rice II

I made this today with two adjustments. First, I used 1 1/3 cups rice as I was concerned there would be a soupy tomato sauce consistency and used a full tsp. of cumin. It turned out just perfect. We all loved the texture and flavor. Will make again.
