Balsamic Roasted Pork Loin

I threw the stuff together and let it marinate overnight. Was all in a baggie so clean up couldn't be easier! Cooked as directed except added 4 garlic cloves to the marinade. Threw some baby carrots and red potatoes on the pan and it was a meal. Glad I used the meat thermometer, it came out perfect. Thanks for a quick and easy meal.

Baked Brie in Puff Pastry

I used a can of crescent rolls and raspberry preserves like some people suggested. I took it to a work Christmas party. It presented beautifully and tasted equally wonderful and it took just a few minutes.

Grilled Cheese Sandwich

Of course this seems kind of easy, but I had a friend recently that didn't know you were supposed to use butter on the bread! This is still my favorite meal, no matter how old I am. In fact, I am serving mini grilled cheese in tomato soup shooters for my cocktail hour at my wedding. Never underestimate what people don't know about cooking! I had to look up how to boil an egg a few years ago!

Spinach Artichoke Feta Ball

I made this exactly as suggested except I used half of the ranch mix. It was great! I took it to a Christmas party and everyone liked it. It only took a few minutes. I served it with pita chips but I think that mini-toast would be really good and not so salty.

Dad's Asian Slaw

Took this to a BBQ for something different. It was so good, lots of compliments! I threw some fried wonton strips on top for more crunchiness right before serving, and used the oriental flavored ramen. I also toasted some sesame seeds and threw those in there. I have been looking for a recipe like this for a while. Easy and tasty.

Smothered Pork Chops

This is one of my husband's favorite meals now! I serve it with mashed potatoes so you can use the gravy. The only thing I do differently is to brown the porkchops first, before I do anything else. This recipe is one of the reasons my husband has gained 15 lbs!

Chicken and Dumplings III

First cool day of the year, and was in the mood for something warm and filling. This was it for sure. I added four cloves of garlic, pressed, and a bag of frozen peas and carrots. I used chicken broth to cook the thighs and used 1 can of cream of celery and 1 can of cream of chicken. I also threw in some dried herbs like sage, thyme and oregano. It is salty, so don't add salt! Make sure to have some bread to dip in the delicious broth.

Pan-Seared Tilapia

This was very good. I've been on the hunt for easy tilapia recipes and this one worked great. The flour added a nice crunch. I might make it even crunchier with parmesean cheese added to the flour next time. I put Tony Chachere's cajun salt on everything so that's the only thing I added. Delish fish!

Shepherd's Pie VI

This was so good! I wanted a quick meal so I cheated and used store-made mashed potatoes. I also used a bag of frozen mixed veggies instead of the carrot mash, although if I have more time I will try that way. I added brown gravy mix, Worcestershire sauce and a little more water. I also forgot to get cheese but it was really good without it. I top everything (I mean everything) with Tony Chachere's Cajun salt. It was really fast, easy and delicious. Also pretty cheap to make.

Crescent-Wrapped Brie

I made this for a party and everyone was thinking I was so fancy and such a good cook! I put raspberry preserves inside and sliced almonds on top and served with those crunchy crouton-like mini toasts. Put it on a crystal cake plate and let the compliments roll in! Pun intended!

Shrimp Scampi III

This was very nice for date night! The man thought I had worked so hard, but it's easy! I even cut some time out by using the frozen already peeled and cleaned shrimp. I did add mushrooms just because I love them and even though it was date night we like extra garlic! Kept the Italian theme and made a Caesar salad and some garlic bread.

The Best Potato Salad

Was very good and very easy. I had never made potato salad before, but this one was great. Got lots of compliments, I made it just as was, except I had green onions. I may use a tad less mayo and mustard next time.

Broiled Tilapia Parmesan

Awesome recipe! Want to eat more fish and didn't have a clue how to cook it. Made it just like it says except didn't have time to flip, it was very thinly sliced and cooked so fast! It was good and crispy around the edges after 7 min. Will make it again although I will try to cut out some fat with low fat mayo and maybe no butter because the butter was just left in the pan anyway. Delish fish!

Lemon Square Bars

I made this exactly as it was. Some of the reviews give so many instructions! I thought it was delicious. I only added the zest of 2 lemons and a little extra juice because I like very lemon-y lemon squares. I thought the crust was really yummy and would make very good sugar cookies by itself. The only thing that I can say negative is that for some reason my crust and my lemon top did not stick together very well, but I think I cooked the crust a tad too long. I didn't have any leftover bars after taking this to work though so I don't think anyone minded.

Eggplant Parmesan II

I am no cook by any means, but I found this recipe easy to do and it turned out so wonderful! I have no idea what the heck it means to "sweat" the eggplant like other people said. I did spray olive oil on the baking sheets and baked the eggplant for 10 min. on each side, and I only used 1 giant eggplant. I fed my mom and brothers and a few friends with one pan. Everyone agreed that it was great. Thanks for the recipe.

Famous Butter Chicken

This is the best recipe! I have taken this to work and everyone wanted the recipe. It's so easy. I make it just the way the recipe says, except I like the crust so I put all the leftover crushed crackers on top of the chicken.

Creamy Chicken and Wild Rice Soup

This is a great recipe. It tastes like a soup from a deli that I used to love. I do add whatever veggies I have around like baby carrots or a bag of frozen veggies or peas or whatever. I usually use half and half because I always have that on hand, as a coffee addict. It is perfection with a loaf of crusty french bread and a good book and a cat on your lap with a fire in the fireplace. I only gets cold one day a year here, but that's the day I cook this!

Mexican Corn on the Cob (Elote)

This was so delicious and easy! I kind of cheated because I saw this video with a guy throwing the whole corn in the microwave, shucks and silks and everything and microwaving 4 minutes for each cob and then the shucks and silk falls off. It's like magic. So I cooked it in the microwave and then followed the recipe exactly with the addition of Tony's season salt and threw it on the grill for a couple of minutes while the rest of the meal was finishing cooking, just for flavor. We all had corn all over our faces. Definitely a big hit and will be repeated!
