My carrot cake is pretty good - I use a modified version from allrecipes.
My cooking tragedies
I made a casserole for a few close friends - a new recipe I had never tried before. After they left I found that someone had spelled "Help Me" in grated cheese on the leftovers (there was quite a bit leftover needless to say)!

Favorite Old Fashioned Gingerbread
Perfect Christmas Day dessert - I doubled the spices as others suggested, except for the cloves which I used just a rounded 1/2 t. and the salt I kept as listed. I cut out 2 tablespoons of the butter and put in 3/4 cup of applesauce. It was perfect. I used a 9 inch round cake pan, started checking at 40min. I ended up cutting the temp to 335 as it was getting overdone on the outside and underdone in center. Total cooking time was 46 minutes. Since the pan was dark/coated I should have kept the cooking temp down from the beginning. Excellent recipe, didn't need icing, served w/ vanilla ice cream and whipped cream.

Sesame Noodle Salad
Excellent recipe - I used whole wheat spaghetti noodles. I did not have hot chili oil, so I left it out, and let my husband, who like hot spice add red pepper flakes to his. There is too much sauce, although some is absorbed, I used the remainder as a marinade for steak, which I pan-fried to medium rare. I sliced it against the grain and served it over the noodle salad. The possibilities are endless with this as a base. Definitely a 'keeper.'

Tortellini Salad
Nice combination - I used tortellini with sweet sausage and cheese, so I left out the pepperoni - also I don't care for olives so left them out. Wish I had thought to add peas to add some color without the other ingredients. Next time I'll also grab some fresh herbs from the garden. This recipe is a definite keeper!
