I made a casserole for a few close friends - a new recipe I had never tried before. After they left I found that someone had spelled "Help Me" in grated cheese on the leftovers (there was quite a bit leftover needless to say)!

Chicken And Apple Curry
This has become my go-to chicken curry recipe - love it - you can add several things, such as peas, green peppers, etc - I do cut back on the onion, using only one small rather than two.

Cocktail Meatballs IV
This is a classic and always a hit - Sam's Club meatballs - Italian style appetizer size were perfect and surprisingly good - they have a 6 lb bag for $14. I could only fit 4 lbs in my crockpot and I mixed a 32 oz grape jelly, 12 oz Heinz chili sauce and 2 T yellow mustard in a pan - it does help to heat and whisk in a pan first so you don't break your meatballs mixing. I put frozen meatballs in crockpot - poured heated sauce over top - started on high for one hour - reduced to low for 2-1/2 hours, then high again for one hour - they were perfect - I might use dijon mustard next time with a hint of Worstershire as another reviewer suggested. Stir gently throughout the heating - there will be more liquid as they cook. They disappear quickly!

Moroccan Quinoa Salad
As written, the recipe is good/ok - with some changes it can be a five star - add 1/4 c. toasted pine nuts (toast by cooking at 350 for about 8 minutes) and add a oil/vinegar mix before cooling/chilling - I use 3 tablespoons white wine vinegar and 6 tablespoons olive oil - mix and add - it's wonderful - very much like a cous-cous salad found here - but with healthier quinoa - I used regular quinoa, as the red is difficult to find. Thanks so much for the recipe!
