Mexican Casserole

I'm the creator of this recipe and OMG I'm so PROUD of it!! Really, give it a go and you won't be dissapointed. In the past, I've variated this recipe so much. Added corn, added olives (green and black chopped), added jalepenos, canned tomatoes. Use the garden in here! Make sure to soften those chopped veggies in a bit of butter on the stovetop and then combine it with the ground chuck. I've also done a cornbread crust with boxed Jiffy mix instead of crescent dough. Your choice! :D

Sugar Cookie Icing

World's Best Lasagna

Learn from my mistake--DO NOT put the noodles directly on the bottom of the pan (like I did) to start out layering. The bottom noodles will burn to the bottom of the pan. Start with a layer of sauce (like the recipe says). I should have read my instructions. Besides the burned bottom, though, it was a hit! :)

Easy Microwave Chocolate Cake

Ok, followed the recipe exactly and kept a sharp eye on my microwave. I got an eggy-tasting brown mess. Didn't taste good at ALL. SO, I tried it again at my buddy's house thinking it was my microwave. Once again, eggy gross-ness. Can't say I'd recommend this one....

Chewy Maple Cookies

Just made these (sans coconut). I live in FL, very humid and they are holding up very well! Rolled them in coarse sugar. Used half real maple syrup (grade B) and half fake stuff from store and they could use more maple taste but I'm too cheap to go out and get maple syrup extract, lol. Good product!

Lemon Layer Cake

Use 1 pkg lemon pudding in here, and scald milk instead of boiling water. Makes a heavier but moister cake.

10 Pound Cheesecake

I haven't reviewed a recipe on here unless it was worthy of it. I am a professional cake decorator, and this recipe is a KEEPER! If using a stand mixer, buy heavy cream and whip your own cream (make sure to add powdered sugar to it!). I used 32 oz. of cream cheese (as I buy mine in 3 lb. blocks), but besides that, followed it to a T and it turned out spectacular!!

Sugar Free Sour Cream Linzer Cookies

Fabulous for being sugar free. Try using a flavored greek yogurt (or plain) as a substitute for sour cream. It does add a bit of sugar but you will NOT be dissapointed! My grandpa can't get enough of these :D

Lots and lots of corn starch/arrowroot for thickening. I must have used a half cup corn starch, but it did the trick! My pie was not runny.

Aussie Chicken

Combination of chicken with bacon is nice. I'd like to crumble the bacon next time, it was too tough to cut with the side of a fork. Maybe this would be better as a slow-cooker recipe, to let that flavor seep through a bit more?
