Italian Cookies II

great cookie - not too sweet, very moist and dense! baked at 325 for 8 mins. until the edges JUST started turning brown. the tops will still be very white and you'll think they aren't done yet but break one open and it probably will be!

Hot Artichoke and Spinach Dip II

This was perfect and so easy to make! Use an 8x8 or 9x9 glass baking dish. Also, trader joes has a great Parmesan & Romano grated cheese blend which is what I used. Also didn't have fresh garlic so just used garlic powder. Also omitted the mozzarella as I didn't have it on hand and honestly you don't even need it. I served with sliced baguette drizzled with olive oil and baked at 350 for 5 mins. Sooooo good!!

Broccoli Pasta Salad

Super easy and delish! Didn't have linguine so used penne. And omitted parsley as I didn't have it on hand. Leave out the crushed red pepper for kids - daughter ate it up!

Best Chocolate Chip Cookies

This is a solid recipe. Didn't have walnuts so I eliminated. Also increased the salt to 1 tsp and reduced the flour to about 2.75 cups. My oven tends to run too hot so I reduced the temp to 325 and baked 10 mins and they came out perfectly soft & chewy. Also used a melon baller to scoop and recipe yielded almost 6 dozen. Update: Didn't want to make a full batch so halved the recipe and put in pecans instead of walnuts and it was just as good as the first time. Baked at 340 for 10 mins.

Fluffy French Toast

super quick and easy to make with ingredients you already have on hand. and taste is so much better than regular french toast! recipe calls for 12 slices of bread but i used regular sandwich bread and probably got closer to 9-10. make sure you keep stirring the batter in between as all the flour tends to fall to the bottom.

Mom's Macaroni and Cheese

Ok, so I made the following changes to accommodate for using one 1lb box of elbow macaroni, (which is 3 c.) but I didn't double all the ingredients. I used 1 stick, or 8 tbsp of butter for the sauce and didn't add any addt'l at the end. I only used 2 c. milk. Melt the butter for the roux very slowly, on low heat and after u add the milk and it comes to a boil, u must keep stirring it. I also didn't have regular velveeta on hand, only the queso blanco, of which I used 8 oz or half the small brick. And I didn't have 2 c. shredded sharp, only a package of the really thin sliced. Just put in the whole package. Also followed another reviewers suggestion and skipped the bread crumbs, bake at 350 for 25 mins.

Easy Homestyle Green Beans

I used 1 12oz bag of green valley frozen steamers (cooked per directions on bag) and thought this was good but agree with other reviewers that it was a bit too salty. Next time I may either add more green beans or cut back to 1/2 or 1/3 of the bouillon cube. Next time may also add a dash of garlic powder along with black pepper.

Easy Sugar Cookies

the dough was not very soft and cookies turned out very hard. this was after i adjusted the temp to 350. next time i will try using completely softened butter as one reviewer mentioned and perhaps margarine??

followed another reviewer's suggestion and added 1 jar of sun-dried tomatoes, 1 can of artichoke hearts and 1 can of sliced black olives and didn't have pine nuts so omitted it and it was amazing!

Baked Scallops

so simple and flavorful! added 1 tbsp of lemon juice to the scallop/butter mixture. made a 1lb bag and the crumb topping was aplenty. also, didn't have fresh garlic so added a little extra garlic powder.

Broccoli with Garlic Butter and Cashews

tons of flavor! didn't have cashews so i left them out and used 1/4 c. of olive oil instead of butter to be healthy... poured over a bag of frozen broccoli that i threw in the microwave for 5 mins! thanks for sharing!

Crumb-Coated Cod

Didn't have stuffing mix so mixed plain bread crumbs with panko bread crumbs and had good flavor. Might add some lemon juice to the oil & dressing mixture next time. Would also serve with tartar sauce.
