Caramel Shortbread Squares

I have a new favorite for the holidays. These squares are scrumptious. They were very easy to make, and I followed the directions exactly. Be sure to stir the caramel well for a few minutes after you take it off the heat so it gets thicker. I let it cool at room temperature for only about 10 minutes. The shortbread base is done just when you see a golden tinge to the edges. Don't wait for the whole pan to color. I was worried about sticking, so I used a 9x9 pyrex with a spray of Pam-butter. I cut them into fudge size pieces because they are so rich. They look good and taste better- start to finish- 40 minutes!

Mrs. Ronzo's Lemon Balls

These turned out perfectly. First of all, though, I wouldn't call them "balls"- they are more cookie-shaped with a cake-like consistency. I added more lemon extract to the batter; just taste the batter as you add to get to where you want. I also added a bit more extract to the icing, and more water as well- 1 spoon at a time until I got the desired consistency. I put a few drops of yellow food coloring into the icing too so they screamed LEMON. Big success.
