I have tried SO many banana bread recipes, including my mother's 100yr old famous recipe. THIS one is at the top. To make it healthier the second time I made it, I replaced the butter with an equal amount of cottage cheese (sounds strange, but works great) and was I was WOWED at how delicious it came out - and my very picky husband could not tell the butter had been swapped. The loaves rose up so high, they almost doubled! Nice and fluffy, super moist and lots of banana flavor. I do add 1 tsp vanilla when I am mashing the bananas. GREAT recipe!!
