Red Skinned Potato Salad

YUM! MAde this last night for 4th July BBQ. Really great. I think the red skinned potatoes make a difference. I use organic b/c I think they taste better. I used bac'n bits b/c I hate cooking bacon. I used a little less mayo and added Grey Poupon. I substituted onion powder for fresh b/c I don't like overpowering onion taste or the bitterness of raw onions. Also reduced eggs to 2. YUM YUM love this.

Best Marinara Sauce Yet

This was definitely easy to make and went over well with the family. BUT I was sort of disappointed with the acid taste. I used organic canned tomatoes and organic canned paste. Added a heaping tablsp of brown sugar as other recommended, but still not quite right.

Baked Kale Chips

These were very easy to make and sort of a fun alternative to snacky foods. Both my 18mos old and 6yr old tried them and ate a few more after that. I liked them best drizzled with olive oil, and then sprinkled with garlic salt and chili powder. Will make again.

Chocolate Chip Cookie Bars

I halved the recipe. It was easy to make but not that great. It tasted like a store bought cookie- there was too strong of a baking soda flavor. I was a little disappointed.

Refried Beans Without the Refry

I recently made 14 slow cookers-full of this recipe for a fundraiser dinner. It was very easy to make, and despite being a little bit bland (which can be corrected individually pretty easily), I thought it was very good. I love that it is simple, much more healthy, and much less expensive than buying by the can (prepared refried). Thanks for this!

Chocolate Cupcakes

I made two batches, one right after the next. They both tasted awful. The consistancy was weird- though the cupcakes were done (nothing left on a toothpick) whene aten, was like oatmeal- gooey and thick. The flavor wasn't great either. I am still looking for the best chocolate cpcake recipe. This was not it.

Salsa Biscuit Chicken

I made homemade biscuit dough instead of buying premade. I thought the flavors were really good. I added a little crushed red ppr to the chicken while it cooked for a spicier flavoered chicken. I also tried the recomendation of another to use muffins tins to form the biscuit... glad I tried that the first time around. I think I might try turning into a pie next time. Toddler loved it.

Slow-Cooker Chicken Tortilla Soup

A little too spicey as is for little ones, but husband and I loved it. I added a little extra enchilada sauce and 3/4 the green chiles. Added 1/2 C corn. Worked fine to add 2 frozen chicken breasts to the mix.

Asparagus Cashew Rice Pilaf

This dish was so delicious and very easy. It definetly took about 2 times as much liquid. I swapped 1/2 C orzo for the spqghetti. I also added 1C peas. This is a very veresatile, light and delicious main or side. I will definetly use again. Thanks for a great one!

Penne with Chicken and Asparagus

This was ok. The consistancy was a little weird and the chicken didn't really have a good flavor. It needed to be marinated in something a head of time that would have comlimented the asparagus. I haven't thought of anything yet.... maybe when I do I will try it again.

Slow Cooker Lentil and Ham Soup

This was a basically good recipe that, due to circumstances, I had to alter. I used beef broth instead of chicken and green split peas instead of lentils. The spices were nice and the ham hock gave the soup a flovorful not too over powering greese that is so good in home cooked food.
