Chicken Rotini Soup

This was a good recipe but I'll be sure to make a few changes in the future. I took the advice of other reviewers and halved the recipe. I also added garlic and a couple of bay leaves to flavor the broth. It did the job quite well. I think the next time I try this, I'll season the chicken and bake it in the oven, then add it to the soup after cutting it up so as to develop a nice flavor. Boiled chicken just always seems a bit bland to me. Also, the rotini doesn't seem to fit as well as egg noodles would. Or rice. It's certainly something to play around with. :)

Arroz con Leche

The anise gave it an interesting kick but I omitted the lime peel. All in all in was still creamy and yummy, just not the flavor profile I was looking forward to.

Pork Chops with Raspberry Sauce

The pork chops were very good, they were moist and well seasoned. The sauce was a bit too sweet for my taste, tho. I took advice from others and substituted the raspberry jam for seedless blackberry and used balsamic to try to cut that sweetness to no availe :( will definitely cool the chops the same again tho, I'll just leave out the sauce ;)

Super-Delicious Zuppa Toscana

This has become one of my favorites. Not only is it absolutely delicious, but it's super simple to make and calls for inexpensive ingredients. My sister and I get together regularly to try new recipes and we're so disappointed when the dish doesn't look like it should ( or taste, for that matter :p) Needless to say, we're foodies so we needed to try to cut down on a bit of the decadence but still keep it flavorful. We used spicy Italian sausage instead of mild and omitted the chili flakes. We also decided to leave out the bacon, we used half and half instead of heavy cream and substituted kale for the spinach. Despite the changes, it was still rich and flavorful, definitely a keeper. Thanks soupersweets!!
