Blueberry Cheesecake Ice Cream

A.Maz.Ing. Seriously. Followed the recipe exactly, except that I mashed the blueberries in the sauce a little. This was the best homemade ice cream I have ever made!

Chicken Cordon Bleu II

Uh-maz-ing. Now if only I could eat it without thinking about how fattening it is! Save this one for when you have to impress someone with your cooking skills. It's worth the calorie splurge every now and then.

Baked Teriyaki Chicken

This was a delicious teriyaki sauce base. Next time I make it I think I will do the chicken on the grill and baste with the sauce. In the oven, the sauce mixed with the pan juices and became too thin, so the chicken didn't have as much teriyaki flavor as it could have.

Carrot Cake III

This is the best homemade carrot cake I have ever had. I got tons of compliments after making it for Easter dinner. Consider substituting applesauce for half of the oil to make it less unhealthy.

Chicken Milano

Oven Roasted Trout with Lemon Dill Stuffing

Delicious! Definitely use sweet onion though, if you have it. I used plain white onions because that's what I had and it made the stuffing a bit too strong--the onions don't cook that much during baking. Great recipe!

This was really easy, and really good. I did as another reviewer suggested and made nuggets instead of strips. The panko coating is much better than normal chicken breading.

Red Broccoli Salad

Yummy, but I made some changes. I didn't use nearly as much bacon as called for (I probably only used 1/2 lb.) and I used more red onion. Instead of grapes and almonds I used craisins and toasted walnuts. It was a huge hit with my Thanksgiving guests.

Chinese Chicken Salad

This was good, but I never did find the Chinese noodles, even though I looked at a lot of stores. Not sure if I was looking for the right thing. The ones I bought ended up tasting awful. The salad was good though.

Thai Cashew Chicken

This was delicious, and not too salty at all. I made a bunch of changes, however. First, I didn't marinate the chicken for 2 hours because I forgot. :) It only ended up marinating for about 10 minutes. Second, I omitted the peanut butter entirely to cut back on the sugar/fat content. Third, I used double the amount of cashews (UNSALTED) and toasted them under the broiler first. Then I threw them in with the chicken mixture and let them cook in the sauce for a few minutes. Fourth, I mixed a little cornstarch with water and added that to the mixture to thicken it. Fifth, I used about a tsp. of chili oil instead of hot pepper sauce. Finally, I served it over basmati rice instead of jasmine. I used regular soy sauce (not the low sodium kind) and had no problem with the salt content. Hubby loved it!

B.L.T. Salad with Basil Mayo Dressing

Not bad, but needs tweaking. First of all, use the full amount of bacon drippings or else decrease the vinegar. Otherwise the dressing is too sour. Also, I thought it needed some additional things in it, so I added sugar snap peas, walnuts and avocado. It would also have benefited from some cucumbers or something. Very good idea though, and a great main-course salad!

Caramel Macchiato Cheesecake

This was really yummy. I left out the coffee and instead put about 3 T. of the caramel topping into the cake batter. Also, once the batter was in the crust, but before it was baked, I drizzled some caramel topping over the top and swirled it around with a knife. It looked beautiful once it was baked. It won second place in a baking contest. :)

Fresh Tomato Salad

This was SO good. I made it as a side dish for a dinner party and one of my guests had three or four helpings. It was not popular with the hubby, who doesn't like tomatoes, but I expected that. If you like tomatoes, it's a winner! :)

Easy and Elegant Pork Tenderloin
