This was fantastic! I used chicken breasts instead (4 large ones), cutting them up into strips. I coated them, then refrigerated them overnight. I put them on a very well-greased cookie cooling rack in the baking sheet, and cooked them (without hot sauce mixture) at 425 for 30 minutes. Then I turned them over and cooked for 15 more minutes. When they were done, I put them in the hot sauce mixture to fully coat them and served them that way, with blue cheese. SOOO good! They weren't soggy at all, super crunchy/crisp, and very tasty.
