Black Bean Cigars

Very good. Made a few changes: substituted one can Rotel diced tomatoes and chiles instead of chopped tomato and chili powder, one small yellow onion chopped, and added 1 c. whole kernel corn. Used dry beans that I soaked in hot water per pkg directions (cheaper). Covered w/can of enchilada sauce and grated mexican blend cheese for last 10 minutes of baking. Great meatless source of protein.

Rhinelander Lentil Soup

Excellent. I was generous on the portions of potato, onion, celery, and carrot. Used canned beef broth over bouillon - just adjusted water accordingly. Served w/the Whole Wheat Beer Bread from this site - best lentil soup I have had. Thank you!

Zucchini Brownies

YEAH - A WINNER! I added 2 squares melted semisweet chocolate as the teenagers around here like their chocolate dark - it was truly great. Even the snotty 17 yr old who cringes at veggies scarfed this down. Would make a great potluck or picnic dessert.

Agree that sugar needs reduced. I also added spices - taste is good but they are a pain to get off the baking sheet due to softness when they're hot. I'll probably stick with my previous recipe.

Bran Flax Muffins

Substituted canola oil for veg oil. Added extra spices, a bit of wheat bran, currants instead of raisins, and some coconut. Very good - best bran muffin I have made. These are great for a husband who tends to skip breakfast - much healthier choice than stopping for a doughnut! I pack a few in sm freezer bags and pull out a bag as needed.

Crab Crusted Grouper

Quite good. Used grated parmesean w/plain bread crumbs. Substituted crushed red pepper flakes for jalapeno. Cooked according to directions except broiled for last 7 minutes. Husband says "make again!".

Grandma Johnson's Scones

Excellent recipe. We're Scots, and this was truly the best scone I have made - better than the recipe from home. Mother was mildly skeptical about the sour cream but these are moist and tender. The only addition I will make in the future is a wee bit of lemon or orange peel to enhance the currants. We thank you!!
