Ham and Cheese Breakfast Quiche

We're having guests for brunch in a few weeks, so I gave this a trial run. We both really enjoyed it. I used fat free half and half, one whole egg and two additional egg whites. I also used bacon, scallions, and the "simply" hash browns which are not frozen. It's not soggy or runny, which is the problem with most breakfast casserole dishes. The only reason I didn't give it 5 stars is that I had to put foil around the edges (much as you would a pie) so that they didn't burn. My husband said this is a keeper, and I will be proud to serve this to guests.

Green Bean Salad

My family really loves this! It is a cool and refreshing summer side dish. I usually use frozen vegetables, red pepper instead of green, and omit the pimiento. The frozen vegetables give the dish better color. Thanks for the recipe!

Balsamic-Glazed Salmon Fillets

This was good, not great. I normally love balsamic flavor, but it just wasn't great with the salmon. Perhaps I just prefer a soy or lemon flavor with my salmon. It was definitely worth a try, though.

Key West Chicken

We really enjoyed this recipe, and it's a nice alternative to BBQ sauce. I added the zest of one lime, grilled the chicken and served with rice and vegetables. Thanks!

Cola Onion Pork Chops

We thought this was just OK. The sauce didn't seem to thicken up at all, and I only used 1/2 can of soda...maybe it was the diet soda that was the problem, but that is what we had. I don't think I'd make this again, even though it was easy.

Orange Sherbet Salad I

This is a simple, low fat alternative for a wonderful dessert. I used sugar free jello and, like other reviewers omitted the bananas. We ate this on Easter and my family just loved it. With a little fat free whipped topping, it reminded me of a creamsicle. Next time I am going to try a raspberry version.

Spicy Garlic Lime Chicken

This was very tasty and easy to make. We loved the little kick from the cayenne and the lime flavor. Served with a vegetable and salad, this is an excellent low fat choice. Thanks!

Wendy's Quick Pasta and Lentils

This was very good. To cut down on the sodium from the soup, I drained a lot of the liquid off. Then, I replaced it with half tomato sauce and half v8 juice. This may have given it more tomato flavor than the original recipe. I also didn't have frozen spinach so I used about 2 cups of fresh. Very healthy, filling, and easy to make.

Seven Layer Tortilla Pie

Thank you. This was an excellent meatless meal. Both my husband and my brother also loved it. I used 2% Mexican cheese blend and it melted well. It's a great (and healthier) alternative to going out for Mexican food.

Indonesian Satay

Thank you! This was excellent, and even my husband said it was a keeper. He loves satay and thought this was really good. I even messed up and added the lemon juice to the sauce during cooking, and it didn't seem to matter. We might add a little chili paste next time for a some kick.

Honeyed Pork Chops

Thank you! This was really simple and very tasty. I didn't pan sear the pork chops first and they turned out very well. I would suggest using very little water, if any. The flavor is really wonderful, and my husband loved them, too. This is a keeper.

Chutney Chicken Salad

This was absolutely delicious. I made a half recipe and wish I would have made the whole thing. My husband loved it, too - it was a wonderful, light main dish served over some romaine lettuce. Thanks for sharing - will definitely make again.

Smoked Sausage and Zucchini Saute

This was wonderful! My husband and I really enjoyed it. He loves sausage, and I used a gourmet chicken/turkey sausage with cilantro. Will definitely add this to my easy weeknight recipes.

Country Apple Dumplings

Thanks for the recipe! Overall, this was very tasty and easy to make. I had to use Gala apples, and I think the large Granny Smith is probably a better choice. I also cut down on the sugar and used part Splenda. With the low-fat crescent rolls, this is a healthier alternative.
