Betsy's Mandarin Orange Salad

Reviewed: Dec. 9, 2006
Excellent taste! Recommendations: add a teaspoon or two of the orange juice from the can into the almonds when you put them in the pan. Cook on low heat and stir often for 5-8 minutes, cool quickly when they brown; they come out wonderful! I make extra to snack on later because they are THAT good! Another thing I do is soak the chopped onions first, as it reduces the OVER-ONIONED flavor and throw the entire dressing (along with the pre-soaked and drained onions) into the blender. The dressing comes out perfect!

Slow Cooker Chicken Taco Soup

Reviewed: Nov. 9, 2006
Completely incredible!! This soup has so much potential because of it's flavor and it has room to grow. Next time I believe I will add some cut up squash just to increase the vegtable content.

Quick Chicken And Wine

Reviewed: Nov. 9, 2006
Watch out for the salt! Overall, excellent and quick, but I think I must have used too much salt and pepper. I will be careful about rolling each piece of chicken in salt and pepper next time!

Tex Mex Black Bean Dip

Reviewed: Sep. 20, 2006
Simple, but very near perfect. I added lemon juice instead of lime, 1/3 c red bell pepper and 1/4 c cuban pepper.

Zucchini Coconut Loaf

Reviewed: Sep. 20, 2006
Perfect! This is easily the BEST bread I've made (I've made a lot of sweet breads)! I recommend using 1 1/2 c whole wheat flour and 1/2 c wheat germ to up the fiber. No noticable changes in taste. Since this recipe can run slightly dry, if you find yourself considering cutting down on the oil - don't. I added 1/2 cup of applesause along with the oil and it is just perfect. With or without the changes this bread is excellent!

Mrs. Sigg's Peanut Butter Cookies

Reviewed: Feb. 27, 2005
Great recipe! I made minor changes. I used (2 and 1/4 cups)whole wheat flour instead of regular with virtually no change in taste! I added a bag of milk choc/peanut butter chips. And finally, I used all natural peanut butter; all with a terrific outcome!

Apple Crisp II

Reviewed: Feb. 2, 2005
Very good, but the topping was lite. I made this again with 1 and 1/2 the topping and it was MUCH better.

Very soft, BUT NOT CHEWY! If you like chewy, go another route.
