Marble Cake I

Excellent and easy cake! I made this for a co-worker's baby shower cake and brought sample cake made from this recipe and from a very traditional marble cake recipe to the office for them to pick their favorite. This recipe was the unanimous favorite. I made changes as suggested by the other reviewers: added 1/4 cup sugar and 1/4 cup melted shortening to the batter; I also mixed the cocoa with 1 Tablespoon melted shortening prior to mixing into the batter. I also was careful to not overbake the cake. It was moist and full of flavor, absolutely delicious! No cracking of the top, either, and it rose high and light. This is the easiest "from-scratch" cake I've ever made.

Pumpkin Dip

Excellent dip! I took this to a party and everyone raved. Instead of pumpkin pie spice (which I didn't have), I used 1-1/2 tsp cinnamon, 1 tsp ginger, 1/4 tsp cloves and a dash of nutmeg. I served this in a hollowed out pumpkin with gingersnaps and vanilla wafers. Yum!

Spiced Apricot Pastries

For taste, this would get 4 stars, as the spiced apricot filling is delicious. The cookies are very bland. The real problem is that the cookies do not stay pinched together in the oven, they open and flatten and you have 2-1/2 dozen unsightly lumps. I followed the reciped exactly, including sealing the dough with the egg/water mixture, but every single cookie opened during baking.

Unbelievable Pineapple Cake

Very good pineapple cake recipe! It is heavy and moist and very good. Try it as a layer cake with Pineapple Filling from this website. Delicious!

Hot Cocoa Mix in a Jar

This is a delicious hot chocolate mix. It needs more sugar for my family's taste; we add a tablespoon of Splenda per serving, and absolutely love it! As other reviewers mentioned, this hot chocolate is really filling and can be a snack all by itself.

Nana's Tea Cakes

These cookies are very bland and mealy in texture. I did substitute butter for half of the shortening, hoping to bring up the flavor, but no luck. Perhaps with some icing they would be good.

Lemon Drops

These cookies, iced with the lemon cream cheese frosting are wonderful. The cookies are crumbly, however, and my son felt the cookies and the icing were a mismatch on weight. Although he's right, they are still great!

Yummy Lemon Salmon Burgers

Excellent, fast and easy! Easy patty-shaping tip: divide salmon mixture into 4 or 6 portions. Spoon one portion at a time into a rounded measuring cup and firm into cup with back of spoon. Tip out of measuring cup into frypan.

Very good! This is a versatile recipe, and can be changed to suit what veggies you like and what's in the fridge. I used some mushrooms and green beans instead of the green pepper, plus I doubled the broth as other reviewers suggested.

Banana Nut Bread II

This is a good banana bread recipe, although fantastic. I used butter instead of margarine (of course), sunflower seeds instead of walnuts and whole wheat flour. The only thing you are doing with your bread machine is to bake the bread -- it is entirely mixed by hand and so you are not saving any time or cleanup. However, I did like being able to make a loaf of banana bread without heating up the oven, so I will definately make this one again.
