Irresistible Irish Soda Bread

Cream of Cauliflower Soup II

Great recipe! The only changes I made were omitting the sherry (didnt have any), and I added 2 tsp grated fresh ginger while simmering. When I served it, I topped it with some finely shredded swiss cheese. It got rave reviews from my hubby and guests.

this was awesome!!!! I had to use red wine instead of sherry. I didn't use salt. I cooked it the day before I served it and that may be what made it extra delicious as many stew type meals are best the next day. Definetely a do again,and again and again......

Easy Vegetarian Red Beans Lasagna

Absolutely delicious! I added a green pepper and sliced cherry tomatoes with 2 greated carrots and sprinkled a bit of feta cheese between the layers. I doubled the recipe and froze half. Freezes nicely!

Absolute Best Potato Casserole

I followed the recipe exactly except I slightly increased the milk and cheese to make sure there was enough sauce. I didn't put any ham in it. This was worthy of the name "best". We all loved it!

Maple Salmon with Mushroom Couscous

Very good, easy to prepare. Makes a quick company meal with little time spent in the kitchen. I marinated my salmon for 2 hours with a coating of maple syrup and then followed the directions as given. The first time I didn't do that and you couldnt really taste anything on the salmon.

Warm Chicken and Mango Salad

This was good, easy and suitable for company. The only change I made was to sprinkle a tiny bit of cayenne pepper on the chicken as I was browning it. As my husband says....."It's a do-again"

Korean BBQ Beef (Pul-Kogi)

Great!! Don't overmarinate it or the meat gets salty. 2-3 hours is enough! Also, don't forget to use the sugar, that is what helps it brown when you cook it.
