Peanut Butter Cake

OMG! this cake is the new family fave! It is so moist and delicious. I used a small jar of natural peanutbutter. I used the separated oil as the oil in the cake and it worked perfectly. Enjoy!

Banh-Mi Style Vietnamese Baguette

These were very good but after trying them with the mushrooms first, I made them next with thinly sliced grilled chicken. We all preferred them with the chicken. These are nice since you can prep everything ahead of time other than the basil and cilantro. The sandwich sauce was great.

Maple Salmon with Mushroom Couscous

Very good, easy to prepare. Makes a quick company meal with little time spent in the kitchen. I marinated my salmon for 2 hours with a coating of maple syrup and then followed the directions as given. The first time I didn't do that and you couldnt really taste anything on the salmon.

This was pretty good. Just make sure you use a sturdy rice such as basmati. I used jasmine and it ended up very "mushy"

Great!! Don't overmarinate it or the meat gets salty. 2-3 hours is enough! Also, don't forget to use the sugar, that is what helps it brown when you cook it.

This was good, easy and suitable for company. The only change I made was to sprinkle a tiny bit of cayenne pepper on the chicken as I was browning it. As my husband says....."It's a do-again"
