Extreme Banana Nut Bread 'EBNB'

Reviewed: Jan. 22, 2015
This was good. I mean, it was fairly boring, all of the flavor came from the bananas and nuts, but I guess that's how banana nut bread is supposed to be (so my husband says, I've never made this before). Although if I do make it again, I think I'll be making the changes according to the number 1 commenter. By the way, for anyone curious, 2 cups of banana is about 4 1/2 regular-sized bananas. I wish someone had posted that before I bought the ingredients for this, because as I said, I'd never made this before so I had no clue how much 2 cups of bananas was, so I just guessed and bought five. Glad I did!

Lemon Cream Pasta with Chicken

Reviewed: Dec. 11, 2014
I would give this dish 5 stars if I didn't think that it had WAY too much lemon. I love lemon, but it was just far too strong here. I followed this recipe exactly as it called for, but I think next time that I will severely cut down on cooking the chicken in it, only put a few tablespoons into the broth, and use 1/2 tsp, maybe even a 1/4, of zest to top it off. And I never could find any rotelle pasta anywhere, so I just used thin spaghetti. That worked fine. Otherwise, everything was fantastic!

Magic Peanut Butter Middles

Reviewed: Nov. 7, 2014
These were pretty good. A little dry, though--perhaps more butter. Also, I think they needed more peanut butter in the middles.

Sweet Dinner Rolls

Reviewed: Nov. 4, 2014
These were OUTSTANDING! Truly, some of the BEST rolls (heck, some of the best BREAD) that I've ever had in my life. So moist, so fluffy, so delicious! I didn't even need to butter them afterward, and I butter butter! I have a bread machine, but I prefer to do bread by hand, so here's what I did: I mixed the water and milk together and microwaved it for about a minute and a half. I poured this mixture into a big bowl, and then I immediately mixed in the sugar (this will cool down the temperature of the water/milk to right about where it needs to be for the yeast to activate) and then added the yeast. It took about 15 minutes to get good and foamy, and after that, I added the salt, egg, and butter. Then, I mixed the flour in a little bit at a time. Then I turned the dough out, put it in a lightly greased bowl, covered it with a cloth, and let it rise in my oven (with it off!) with a pan of hot water underneath it for 45 minutes. After that, I punched it down, took it out, divided it in half, and rolled each half into a pizza crust size. I buttered it with the 1/4 cup, cut the circles into pizza sized pieces, and then rolled them tightly from the bottom. I put them on a lightly greased pan, seam down, covered them with a towel, and let them rise the same way for an hour. Then I baked at 400 degrees for 9 minutes. PERFECT!

Chicken Tikka Masala

Reviewed: Nov. 4, 2014
It was entirely too spicy (and I cut the cayenne pepper WAY down and didn't even use a jalapeno!) and the flavors just didn't mesh.

Chocolate Mint Cookies I

Reviewed: Oct. 14, 2014
Way too sweet for a cookie that's going to have chocolate candy melted on top. It has a lot of brown sugar in it. which I think didn't even mix, anyway. The dough was pretty tough to work with. I'm not unhappy that I tried them, but I wouldn't make them again.

Pumpkin Brownies

Reviewed: Sep. 12, 2014
These were superb! I didn't get the marbling effect, but I think that was my fault with the layering. Also, the ground cloves were a little too much for me, so the second time I made these, I cut them in half and it was soooooooo good. Also, make sure to COMPLETELY cool before eating--that makes them so much more moist. Anyway, 5 stars, easily!

Pumpkin Ginger Cupcakes

These were very good. SUPER moist! I didn't think it was very...pumpkin-spicy, if that makes sense, but the cupcake itself was very unique.

Chocolate Cookie Pizza

Reviewed: Aug. 23, 2014
This was a great recipe! I followed everything but the toppings to a T. Instead of the coconut flakes, chocolate candies, and pecans, I did chopped up KitKat and Snickers pieces. Because there was so much chocolate, I also left out the white chocolate drizzle. But the base and "sauce" was very good. However, I would suggest baking the cookie for a little less time (maybe 12-13 minutes), as it wasn't very chewy at all and a little too dark on the edges, and DEFINITELY grease the sheet. I greased it just a little and the cookie still stuck to the pizza pan horribly. Also, I ended up needing quite a bit of hot water to make the sauce more glossy, probably about 3 tablespoons worth. Otherwise, yummmmmmy!

J.P.'s Big Daddy Biscuits

Reviewed: Aug. 21, 2014
The flavor is superb. I end up needing to add CUPS of flour just to make it workable, and even then, the dough is still incredibly sticky and just tears to pieces when I move it to the baking pan. And then they just NEVER get big. They look more like chips by the time they're done. However, the flavor is OUTSTANDING, I mean it--better than store bought or even restaurant made. I just need help in making these actually resemble something even similar to a biscuit!

Zucchini and Potato Bake

Reviewed: Aug. 21, 2014
This was a great recipe, but it DEFINITELY needed more zucchini. Two medium ones were just not enough, especially considering how much they shrink. The little that was left just got lost in the potato/bread crumb flavor. I would suggest adding equal amounts of zucchini and potato next time, and it'd be perfect!

Waffles I

Reviewed: Aug. 21, 2014
These were really good, but I still feel like they were missing a little something. They were kind of bland and not very fluffy, but definitely moist and still got devoured in this house! Maybe I'll try some of the reviewers suggestions to amp this up a bit. It doesn't need much, still a good solid 4 star recipe.

Playgroup Granola Bars

Reviewed: Aug. 21, 2014
These are FAB-U-LOUS! After my first try with them, however, I edited them for health purposes, and they were genuinely just as yummy! I added a half a cup of flax seeds, I used wheat flour instead of all-purpose flour, and I used canola oil instead of vegetable oil. I've also made them with and without the raisins. They are delicious either way, but my family LOVED them with the raisins (I did, too). Also, I only baked them for about 20 minutes, as to keep them chewy. Soooooo good once they cooled! But anyway, thanks to whomever submitted this!

These were incredible. The ONLY thing I did differently was just using a 1/2 cup of butter. Otherwise, I followed the recipe exactly and it was AMAZING! I've never had Snickerdoodles before but I most certainly will again!

Oatmeal Peanut Butter Cookies

Reviewed: Aug. 4, 2014
These were great. However, I did use butter instead and I only used 1/2 cup. I only used a 1/2 cup of white sugar as well. When I made these, I used crunchy peanut and put a gingerbread glaze on them...seriously superb!

Ranch Dressing II

Reviewed: Aug. 3, 2014
One day, all my husband and I had available for lunch was stuff for a salad. I wanted to spruce it up a bit, so I decided to look for some homemade ranch dressing, as we almost always bought ranch from the store. I really can't say enough how happy I am that I did...I now won't even buy store-bought stuff anymore. I got so spoiled on this stuff! It's AMAZING just as it is...however, over time, I made just a small change to make it a little more liquid-y (since we always have it on our salads)--I use a 1/4 cup sour cream and a 1/4 cup buttermilk, instead of the 1/2 cup sour cream. This makes it a little more spreadable, but we also do like the thickness, so the sour cream works out great. Thanks so much to whoever submitted this!
