Easy Lemon-Blueberry Jam

I was so nervous to use this recipe but I followed it as stated except I did use the food processor on 3 c. blueberries otherwise it would've been whole blueberry jam. It is really runny like jello at first but it all works out in the end product. This is delicious!

Almond Toffee Bark

This is so good. Make sure you boil it for 10 minutes or more til golden. Also, just sprinkle chocolate chips over, they will melt, then spread. I made this for Mother's Day gifts.

I have to rate this a 5 star with only one change, 1/4 cup honey instead of 1/2. I know if I would've used 1/4, this recipe could be a 6 star. It is very easy and very delicious.

Mexican Style Shredded Pork

This is good but I could only find chipotle peppers so it was a bit spicy. I tried again. This time I found the chipotle sauce. Big difference, just right this time. I didn't make the rice but served the pork on fried corn tortillas with guacomole and sour cream. Very delicious. Third times a charm!! OK, I followed recipe exactly & made nachos with the meat!! This is a fabulous meal! I made fresh nacho chips with corn tortillas, black beans, cheese, & green onions. I baked in oven for 10-15 minutes, FABULOUS!

Potato Chip Cookies

I a little leery of this recipe. Only 1/2 cup sugar, no egg. So, I added 1/4 c. brown sugar and 1 egg. I also added some butterscotch chips to half the batter. They are very tasty.

If you're looking for a crispy chocolate chip cookie, here's your recipe. The flavor of these cookies is fantastic. I've always used the Award Winning Soft Chocolate Chip Cookies but these cookies are so good, I don't know if I can go back to soft. Hmmm........

Easy Pizza Sauce III

All I had on hand was a 8 oz. can tomato sauce and a can Campbells tomato soup. I used that and spices as listed. This was very good and I'm sure with exactly the right ingredients, it would be even better. Thank you for the recipe. My pizza was delicious.

Banana-Zucchini Bread

I've made this bread so many times in the past couple months. It is so delicious! I only use 1/4c. veg./canola oil and 1/2 c. unsweetened applesauce. This makes it pretty tasty and healthy. Updated review 6/8/09-add 1/2 c. dried cherries in place of dried cranberries. This is even better.

Texas Black Bean Soup

I only gave this recipe 4 stars, that is until I added about 1 1/2 lbs. of round steak cut and browned with celery and onion. Now, it is definitely a 5 star recipe. My family loved it.

Scottish Shortbread IV

I halved the recipe to try it since it called for so much real butter. Now, I know they are worth every penny and then some. This recipe is even better than the pricey store-bought shortbread. To top it off, you get delicious aroma in your home. Do try.
