Sausage Hash

This was really good, but the leftovers were even BETTER! I like my hash a bit crispy, so the next day when I reheated it I got the pan nice and hot and made both sides crunchy, mmmmm. Cook and dice the potatoes the night before and the dish is a snap to whip up on a busy evening!

Pistachio Cake II

i gave this recipe 4 stars only because it is not a particularly original recipe. that said, i think this is a very good "base" recipe that i like to use for other flavors of cake. i have made it with the pistachio pudding and it is good. ive also used it to make chocolate cakes (chocolate cake mix and vanilla pudding mix) but my favorite by far is my "emergency lemon almond cake". same basic cake recipe, only i use a box of lemon pudding mix and throw in about a cup of slivered almonds. bake in a bundt pan until done, then drizzle with a frosting made of 10x sugar, milk, and lemon extract. sprinkle w/slivered almonds and youve got a beautiful, delicious, moist cake that everyone will think you made yourself!!

Special Buttercream Frosting

this was PERFECT for frosting sugar cookies. everyone LOVED it and wanted the recipe. my only mistake was using butter flavor shortening which made the frosting yellower than i would have liked, but thats my error not the recipe!

Black Bean, Sausage, and Sweet Potato Soup

this recipe was good. it requires fairly close monitoring though. i kept having to add more water, as the soup was getting "sticky". also, the italian sausage i purchased came in natural casing, so cutting it up was not really a feasible option, so i just squeezed it out of the casing and made tiny little meatballs out of it. not as spicy as i had hoped for...

Mexican Shepherd's Pie

first off, i must admit i changed the ingredients a bit. instead of using ground beef i used one can of black beans and a bowl of leftover taco meat. overall it is a good recipe for using up leftovers from taco night, but i would not decide to make it just because. my boyfriend said it tasted "suspicously like beans and cornbread".

Ricotta Cheese Cookies

this recipie is DELICIOUS! i drizzle them with a little bit of lemon icing instead of using the frosting here and they are a HUGE hit! very soft and tasty!
