Butternut Squash Soup with a Kick

Reviewed: Oct. 18, 2010
Yum!!! I prefer the squash roasted. Split the squash in half, salt & pepper and put 1 TB butter in before roasting 1 1/2 hours. Pour the juices out into soup pot before cutting so you don't lose the liquid. It was great as it was, but the heat was minimal. I will make again with more jalapeno so I can try it with sour cream. Thank you so much for the recipe!

Marshmallow Crispie Bars

Reviewed: Jan. 21, 2008
If you like gooey then look no farther. Like previous people I use the microwave. For the best flavor use real butter,.. a little extra doesn't hurt! ;)I also doubled the vanilla extract, and added an additional 1/2 cup of rice crispy cereal. I pressed into heart shaped pans and will be sending out "care packages" to my kids who are away at Universities. They'll be thrilled to have this childhood favorite. Thanks!

Thai Breaded Chicken Filets

Reviewed: Apr. 17, 2005
My husband loved this one. I sprayed some olive oil on top, but they were still not as crispy as I would have liked. (I'll have to work on that.) I served it with nice green salad with spicy thai peanut dressing. Very good together.

Ricotta Cheese Pancakes

Reviewed: Apr. 30, 2007
Nothing like feeling you are really "indulging" if you are dieting by having these pancakes. The only changes were adding 1 teaspoon vanilla, a pinch of salt and substituting wheat flour. Topped with the fresh berries and a sugar free maple syrup. I've had better pancakes, but this really is a good healthy version of a pancake. =)

Boneless Buffalo Wings

Reviewed: Apr. 3, 2011
My husband & I loved this one. The chicken is great even without the sauce! I doubled the flour mixture, dredged 2 times, and let rest for 10 minutes before deep fat frying. When I make this for company I will make several types of dipping sauces. Thank you so much for sharing. :)

White Chocolate Macadamia Nut Cookies III

Reviewed: Nov. 15, 2006
I made sure that everything was measured extremely accurately, but the cookies didn't spread at all. Infact they held their exact shape. I always use real butter and I am not sure if that makes a difference or not but next time I will add less flour and I will add more white chocolate as other reviews have recommended. I used salted macadamia nuts and the over all flavor of the cookie was very good.

Microwave Lemon Curd

Reviewed: Dec. 23, 2012
I did exactly as MommyFromSeattle did. In fact I doubled the recipe my first try. I needed to cook it for 11 minutes since it was a double recipe. The Lemon Curd is simply wonderful! I love quick and easy that tastes like it took at lot of effort. :) Thanks so much for sharing.

Hummus III

Reviewed: Apr. 24, 2007
I added some red pepper flakes and more garlic because I prefer more flavor. I also reserved some of the liquid and used a little over half of it because it was too thick. I prefer a really creamy texture and I still haven't found a recipe that is as good as some I have purchased. Thanks for sharing.

Basic Crepes

Reviewed: Jan. 20, 2007
So easy and so good. I always mix crepe batter in a blender so lumps are not an issue. I added 1 TB sugar and 1 teaspoon of vanilla since I was making dessert crepes. I have a crepe maker and this recipe worked very will with it after adding an additional 2 tablespoons of flour. This recipe is a keeper! Thanks for sharing.

Mom's Zucchini Bread

Reviewed: Sep. 21, 2011
The recipe is so good! I will make over and over again. It is plenty sweet. I love the flavor of brown sugar, so I used 1/2 white and 1/2 brown. Next time I will use a total of 2 cups. I had so much zucchini that I used 3 cups instead of 2. This is a keeper! :)

Sweet Potatoes

Reviewed: Jun. 23, 2007
Spray the pan and then the top of the potates when doing baked sweet potatoe fries,.. it helps them crisp up without the additional fat of the olive oil. They are also really good when tossed with garlic salt for a twist. We have these at least twice a month. =)

Pollo Fajitas

Reviewed: Mar. 1, 2007
I read the reviews after I already had the chicken and steak in the marinade. We like things on the spicy side so I added red pepper and a couple teaspoons of taco seasoning. My husband really enjoy this recipe, but I will play with the seasonings more when I make it again. Thanks for sharing.

Brazilian Lemonade

Reviewed: Jun. 25, 2006
This is very good and so refreshing. As others suggested I did put in less sugar and it was perfect. The creamy consistancy is a nice twist on the usual limeade. Definitely one I will make again. Thanks for sharing!

Stephan's Broiled Salmon Pesto

Reviewed: Apr. 9, 2005
This is definitely a keeper! So simple to prepare, but very attractive plated and tasted wonderful! It doesn't hurt at all to let it marinate longer than 15 minutes.

Refried Beans Without the Refry

Reviewed: Mar. 28, 2014
Next time I will add less salt. I should have read the reviews. Other than that they were so good. I like the idea of adding different ingredients to change up the flavor from time to time. Thanks for sharing the recipe. :)

Balsamic Roasted Red Potatoes

Wonderful recipe. We love onions with our potatoes so I diced up a sweet onion and added it. I also added some melted butter. It is hard to go wrong with butter. ;)

Honey Mustard Grilled Chicken

Reviewed: Jun. 21, 2011
This is a keeper. Put frozen chicken breasts in the marinade and placed it in the refrigerator for 18 hours before grilling it. It was so moist and even the people that don't like mustard totally enjoyed it.
