Excellent recipe. I use twice the beef and a pound of italian sausage. It makes plenty for two people for the week.

Pizza Pinwheels

Reviewed: Dec. 10, 2006
It's so easy to make these. I didn't change the recipe at all and they turned out great. I tried baking them on a pizza stone and a cookie sheet, the stone gave better results. I'll chop up the pepperoni next time, seems like they may roll up a little better. I'll definitely make these again.

Mac and Cheese II

Reviewed: Feb. 19, 2006
Excellent recipe. I decided after first trying the recipe to add more cheddar cheese to the recipe to make it a bit thicker and give it a little bite. The recipe was alot easier than I expected.

Boilermaker Tailgate Chili

Reviewed: Oct. 26, 2005
The best thing I learned from this recipe was to use Italian Sausage in my chili from this day forward. I think that was a flavor that I had missed in my years of chili-making. I did skip out on the peppers and celery as they just didn't sound appealing for chili. Also I always add a can of rotel and subbed it for some of the tomatoes. Finally, I subbed some of the chili beans for kidney beans, about half of them. I think this would be a great recipe for the chili-beginner.

Chicken Jambalaya II

Reviewed: Aug. 28, 2005
Pretty good recipe, I'll definitely make it again. I used some cajun spices instead of the spices listed, but the rest of the recipe was unchanged. Be sure you have a BIG skillet for this recipe, it makes a ton(closer to 7 or 8 servings rather than 6). I think next time I may substitute a can of corn and black beans for some of the tomatoes, peppers or onions. Not that there were too many of them, just that I think corn and beans would be an excellent addition. Maybe I should just get a larger pan! One more thing, this makes an excellent chip dip. My girlfriend mentioned that it would be good with corn tortillas and we only had plain corn chips, so we scooped them and it was great. I went out after dinner and got the tortillas, I'm sure it'll be good as well.

Chicken Pepper Steak

Reviewed: Aug. 22, 2005
This is a great recipe. I think the time involved is is a bit more than 45 minutes, but not by too much. I think I'll use a little less water with the cornstarch next time though, it took awhile to thicken and even then it was still a bit thin. I will be making this dish again though, and my girlfriend loved it.

Pancho Villa Baked Tilapia

Reviewed: Jan. 20, 2005
It seemed like the fish didn't absorb the flavor of the tomatoes, chilis, and juices very well. It's unfortunate because I was really excited about the recipe. Perhaps it would work better if it was baked longer. FYI, I cooked it for 35 minutes.

Hot Cocoa Mix

Good recipe. Works well with milk. I like to add mini-marshmallows in the mix. Also I add a bit more sugar to it.
