This is by far our favourite tortilla soup recipe. The broth base is just fantastic. I did this quick on the stove top, frozen chicken and all. Added a can of black beans as well. We tried it over rice, but just not as good. You have to do the real corn tortilla's baked in the oven, the chips just won't do and seriously alter the taste. Also topped with a wedge of fresh lime, cheddar, avocado, diced tomato, fresh cilantro and the chips!! Amazing flavour...oh the only thing I did change was doubling the liquid (broth no water and enchilada and spices) The 1st night it had too much chicken, beans, etc. with the liquid doubled it was perfect.
