Barbeque Chicken

I had 2 big chicken thighs. Scaled down recipe to 4, didn't bother simmering sauce either, just threw it all in the oven, sat back and had a glass of wine. Served with leftover rice and a salad. Easy & Tasty.

Poblano Chile Pepper Soup

Well, everybody's heat tolerance is differet, and it is true these peppers can vary. I left in most seeds and even roasted a jalapeno (with seeds)and threw in with this - pretty darn hot, but with a dollop of sour cream on top and a little cream in the soup. Yummy and spicy.

As usual, the simpler the better. So goes with this. I did add a bit more coconut probably 1/2 cup - just to use the last of it.

Mushroom Pie

This was wonderful. I used a combo of mushrooms (shitake,cremini,white,portobello)and tarragon instead of dill. Used the puff pastry shells and filled them with mushroom filling.

Swordfish a la Siciliana

Coriander & Cumin Crusted Grilled Swordfish with Avocado Relish

This was exceptional - used a hammer and plastic bag to crush herbs. Used shark instead of swordfish (cause thats what was available)and grilled. B/F said this would cost $30 a plate out. Served with grilled asparagus wrapped in bacon.

Cha Cha's White Chicken Chili

Great white chili - I used fresh jalapeno instead of canned, 1 can of chicken broth and pureed one of the cans of beans as a thickener. Simmered for longer, nice if you have the time but probably not necessary. Top with sour cream and cilantro served with flour tortillas. YUMMY

Southern Grilled Barbecued Ribs

Great to bake ahead of time and grill whenever the bbq was ready - after appetizers and drinks were going,so I could appreciate the guests. Everyone wanted the recipe from the person in charge of the actual fire (the boyfriend). Note: behind every good man - he got all the credit but I got to relax let him enjoy the praise. Got more ribs to make the next day.

Old Fashioned Fudge

I make a variation of this using canned milk, instead of corn syrup and whole milk and only 1 teaspoon of vanilla. I think its much better than the marshmellow creme type. The trick is it has to be taken off at the correct temp (I use the soft ball method in some water) partially fill the sink with cold water and place the pan in the sink add vanilla and butter and beat (its an arm workout)till glossy. Immediately put into pan lined with wax paper. It will turn like rock if you beat it too long. Also this doesn't harden in moist weather. Go figure!

Mexican Salmon

Easy, tasty and healthy. Used hot iron grill on skillet top and came out crunchy on outside moist inside. Kitchen was pretty rank for a day. But after airing out for a day was ok. Worth it
