Vegan Bean Taco Filling

I really liked this. Next time I make it, I'll make a bunch and freeze in individual containers for work lunches. I too added some frozen corn, some chopped tomatoes, shredded carrots, and a bunch of hot sauce. Didn't have any salsa, but pasta sauce combined with hot sauce and a few hot pickled peppers did the trick! A very great base for expanding and adding all your favorite things. I had them rolled up burrito style in a whole wheat flour tortilla. I had no lettuce, no cheese, no nothing (!) to put on it for dressing, and I still loved it. Thanks for a fast, healthy, delicious meal that's sure to become a staple in my house!

Grandma's Polish Perogies

These were great! I grew up with perogies...they were a staple in our house and these taste exactly like my moms. We usually ate them with mushroom sauce (cream of mushroom soup from a can). This was my first time making them. I did not use the onion salt, but added way more cheese. Made the dough and potatoes the night before, stored in the fridge, and then assembled and cooked them the next day. Excellent! Thanks for the recipe!

Sandy's Chocolate Cake

I loved this. Made it for a birthday (only my second attempt at birthday cake--the first time I made one, it was pretty dry) and got rave reviews! I followed another reviewer's advice and cut to 9 servings to make 2 layers instead of three. Other than that, I followed the recipe to the letter. Put some Hershey's Hugs in the food processor to chop them up and sprinkled them on top. It is very sweet, but I quite liked it. The sour cream does something very nice for the icing and the cake itself stayed nice and moist. Thanks Sandy!

Quinoa and Black Beans

I followed this recipe exactly, except that I added a red bell pepper with the garlic. This was amazing! I know it looks bland, but it really isn't. I plan on making this at least once a week, adding other veggies (tomatoes, maybe carrots). Try it!

Tofu Parmigiana

I loved this! I followed all of TORONTOIS recommendations, except I did not freeze the tofu...just because of time constraints. This was absolutely delicious! I used the parmesan cheese in the shake container; this did make it too salty and I would do differently next time, but still...amazing!

Peanut Butter Cup Cookies

I thought these were just great and ridiculously easy to make. For the first batch, I used mini cupcake pans, but found the cookies didn't have enough room to spread when I pressed the peanut butter cups in. For the second batch, I still used the mini cupcake liners, but put placed them in a large muffin tin. This worked perfectly! I made half with Hershey's kisses and half with peanut butter cups and both were delicious. I also made a few with caramel cups, but this was a tad too sweet. These were also extremely portable and popular at a recent party. Thanks for a recipe I will definitely make again!

Pumpkin Bread IV

I thought this was excellent and worth 5 stars, partially because it is ridiculously easy to make. I used 1/2 whole wheat flour and made it into muffins. Half of the recipe makes about 24 medium sized muffins. Chopped walnuts are a nice addition to the batter and crushed walnuts added to the top of the unbaked muffins dress them up a bit. The only thing I would do differently next time is lower the sugar amount: a wee bit too sweet for me!

Quick Alfredo Sauce

I loved this. It was quite easy. I followed the recipe, except that my sauce thickened up too much, so I put in more cream and then when I ran out of cream, just kept adding milk. Also, I covered some chicken pieces with cajun seasoning, fried those, and then threw them in the sauce, which gave the sauce a delicious spicy flavor! Thanks for a great recipe!!

Colleen's Potato Crescent Rolls

These were wonderful! I too cooked them the same day. I let the dough rise for an hour in the oven with the light on. Shaped them into crescents. Let them rise again for an hour. Voila! Wonderful rolls. Next time, I would decrease the sugar a bit, if I wanted something a little less dessert like. An awesome recipe )and I'm often not the best with breads!).

Roasted Chickpeas

I love this recipe. I use very little oil, and usually use chili powder, paprika, and cayenne. I've never had problems with them not being crunchy, although I have burnt them at times. But burnt or not, they're great!

Butterscotch Oatmeal

I just love this. It's great how it is, but after experimenting a bit, I don't add the butter or quite that much sugar. Just the egg, the milk, a tsp of brown sugar and a splash of vanilla extract. Afterwards, I add in a teaspoon of strawberry yogurt for extra taste! I could eat this three meals a day =)

I liked these! Next time I would add more pumpkin and an extra egg white. I used 1/2 whole wheat flour and they came out just fine. Topped them with unsweetened applesauce.

Big Soft Ginger Cookies

Hm, not sure what I did wrong, but mine did not spread at all, and instead turned into ginger snaps. Not soft at all. But, they were delicious ginger snaps! **edit: I decided to try these again and they worked quite wonderfully! Didn't change a thing from the original recipe except added a little more of all the spices. Yum!

Mushroom Blue Cheese Turkey Burgers

I quite enjoyed these. I followed the recipe, except: 1. I added a whole cup of blue cheese! Very, very cheesy, but I liked it. 2. I made 8 small burgers out of it instead of 4 big ones 3. I fried with a little nonstick spray in a pan Served on whole wheat buns with mustard, lite mayo, and sprouts. Delicious! Ate one and froze the rest for future lunches.

Magic Cookie Bars from EAGLE BRAND®

Pretty good and way better the next day after sitting in the fridge overnight. I took other reviewers' advice and mixed nuts/coconut/choco chips together, spread over crust, then drizzled the milk over top. I thought these were probably a 3-star cookie, but gave them 4 because they took no time whatsoever. I will make again when I need something tasty in a pinch.

Feta Chicken

I quite liked this. It was easy, relatively healthy, and tasty. Changes I made based on others reviews: 1. Added fresh chopped basil to the feta (even though it was sundried tomato and basil feta) 2. Brushed the chicken with butter, then dragged in bread crumbs 3. When it was pretty much done, I added one tablespoon of pasta sauce on top and a bit of grated mozza, then baked about 5 mins on broil until the cheese bubbled. I would do it this way again. Next time, I would probably use less feta; it was a bit feta-heavy for my tastes, but that might be because I just stuffed in as much as I could fit into a pocket in the breast. Overall, a good recipe for company, I'd say!

Baked Dijon Salmon

This was really good. I'm not the biggest fan of salmon, but I really enjoyed this. I didn't have any parsley, but I did use Italian bread crumbs. Just the right amount of sweetness and, with fresh lemon squeezed on after it's cooked, it is a wonderful mixture of sweet and tang! As another reviewer said, it does take away some of the fishiness of salmon, which is okay in my books!

Oatmeal Dinner Rolls

I thought these were pretty good. They turned out nice and soft, and as another reviewer mentioned, they have more texture than regular rolls. Good for sandwiches. I did find the dough a bit tough to work with. I had to add 2 extra cups of flour to get it to be dough in the first place. Then after it rose, it was all sticky again! Nonetheless, a great dinner bun. We're eating them with nothing on them!
