I really liked this. Next time I make it, I'll make a bunch and freeze in individual containers for work lunches. I too added some frozen corn, some chopped tomatoes, shredded carrots, and a bunch of hot sauce. Didn't have any salsa, but pasta sauce combined with hot sauce and a few hot pickled peppers did the trick! A very great base for expanding and adding all your favorite things. I had them rolled up burrito style in a whole wheat flour tortilla. I had no lettuce, no cheese, no nothing (!) to put on it for dressing, and I still loved it. Thanks for a fast, healthy, delicious meal that's sure to become a staple in my house!
