Good Old Fashioned Pancakes

Delicious Pumpkin Bread

Not the best pumpkin bread I've ever made. It was very sweet. I doubled the spices, so that was good. The texture was good, very moist. But it wasn't very pumpkiny. If I made it again, I would definitely add more pumpkin.

Mom's Pumpkin Pie

Fantastic! This was incredibly easy to make and tasted absolutely delicious. As other recommended, I increased the spices and only used 1 cup of milk. Turned out perfectly!

Victoria Sponge Cake

I'd never made Victoria Sponge before, but this was seriously easy to make. I sliced it horizonally and filled the centre with M & S strawberry jam and real whipped cream. My English friend declared it fantastic.

Moist and Chewy Peanut Butter Cookies

Mmm-Mmm Better Brownies

These are FANTASTIC! Quite possibly the best brownies I've ever made! I even cut the sugar down to 3/4 cup and they were DIVINE. They are wonderfully gooey, sweet and chocolately. And MUCH lower in fat and calories than regular brownie recipes, but you'd never know!

Chilie Pork Tacos

This was an excellent alternative to regular ground beef tacos. Very tasty and just the right amount of spice. I topped with Red Leicester cheese, tomatoes and lettuce. YUM! Will definitely make this again.

Totally Tangy Baked French Fries

Excellent! Really spicy and delicious. The only thing I did differently was to use Charlotte potatoes (lower GI) and cut them into wedges. Then I boiled them for about 10 minutes BEFORE baking them. They were crisp outside and creamy inside. YUM! If you don't like really hot stuff, you might cut the cayenne in half.

Cherry Chocolate Cobbler

Super yummy! Not the best ever, but really REALLY good! Used light cherry pie filling and lower fat butter (Brummel & Brown's) to cut down on sugar, fat and calories.

Grilled Chicken Cordon Bleu Sandwiches

This was a superb sandwhich! Delicious, filling, and something a little different. I used LF cheese and butter and Light mayo instead of sour cream. Also, my grocer didn't have pre-cooked chicken, so I took a 1/4 of a fresh boneless chicken breast and cooked it before making the sandwhich. YUMMY!

Real French Crepes

This is a fantastic crepe recipe. I've made crepes many different times with many different recipes over the years. This was certainly the easiest! I added a small bit of sugar and vanilla for flavor since I was making strawberry crepes. Did not even need to sweeten the fresh strawberries! YUM!! I can see that they might be a bit "floury" tasting without the sugar and vanilla, but with, they are fantistic! Come out of the frying pan perfect. I will use this recipe from now on!

Regular Crepes

This is a fantastic basic crepe recipe! The first time I made it exactly according to recipe. Yum. The second I added a little extra vanilla and sugar and filled with fresh strawberries. SUPER Yum! You could easily delete the vanilla and sugar as well, and add herbs and fill with cheese, meats or veggies for a yummy savory crepe.

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

This is fantastic! I used fresh spinach instead of frozen, and half blue cheese and half low-fat Irish cheddar. It was so good and not too rich, and the chicken was super tender.

Lower Fat Banana Bread I

Not the best banana bread ever, but pretty good. Especially as it is low fat yet still moist. As others suggested, I added cinnamon, vanilla and ginger to give it some flavor. It would have definitely been bland without these. I also added an extra banana to make about 1 1/2 cups. Used the full amount of margarine and it was very moist.

Yummy Pikelets

I've never had pikelets before, so I have no idea how to compare, but this is a nice, easy recipe for basic pancakes. A little heavy. Next time I will add more milk. Also kind of plain. I think vanilla would be good, though it tastes pretty yummy with strawberry jam! Definitely will use again, though, for how quick a simple it is. And lower in calories than most pancake recipes!

Oatmeal Raisin Cookies I

I really love the texture and consistancy of these cookies. I just love how chewy they are. HOWEVER, they are a little... bland. I even added extra cinnamon and some ground cloves, and they were still on the bland side. Until the next day, that is! Then the flavor was fantastic. These definitely improve after sitting a bit. I will definitely make this recipe again.

Best Chocolate Chip Cookies

These really are better than Tollhouse, and I am a big Tollhouse fan! They key is dissolving the baking soda in the water, and the extra vanilla. The only changes I made were to use half butter and half margarine, and to use half the amount of salt called for. Also, I used M & Ms instead of chocolate chips and left out the walnuts. SO good! Nice and chewy, just as I like them!
