Roasted Pecan Banana Bread Loaves

My sisters loved this and requested for more! Used the mini loaves pan, added 3/4 c of sweetened coconut flakes and reduced sugar to 1/2 c.

Lemon Bread

My son loved this! He finished 1/4 of the loaf in one sitting. I added 2 tsp of lemon juice and used a butter flavored shortening. I only baked it for 45 mins.

Banana Chocolate Chip Cookies

There were 2 overripe bananas in my ref so I decided to bake these cookies. I love them, will definitely make again! I reduced oven temperature to 350 and baked them for 15 mins. Instead of choco chips, I used 1 c of white choco chips and 1 c of dried cranberries.

Following other reviewers' recommendations, I used 1/2 c butter flavored shortening and 1/2 c unsalted butter. I also lessened the sugars to 1/4 c white and 1/2 c brown. It was okay!

Quesadillas II

Cooked it yesterday and my son, Tyrell, loved it so much! He's a picky eater and always make faces when it doesn't suit his taste buds. But with this he had two servings!!! Definitely a keeper!! I used the rotisserie chicken breasts and Rotelo diced tomatoes and chilies, perfect, I didn't add any seasonings!

Grandma Johnson's Scones

OMG, these were so good! I baked these for a baby shower's prizes with choco chips/raisins and white choco chips/dried cranberries. My sister fortunately was the one who got them and asked me to bake more because everyone in her house wants them! Definitely a keeper!!!

Superb! I baked this w/o the walnuts, my son is allergic to nuts. He couldn't stopped eating them, chocolate chip cookies are his favorite! He even brought some to school to share with his friends. I'll definitely bake it again--

Coconut Cream Cake I

Chicken Breasts Stuffed with Perfection

Superb! My family always request this everytime we have potluck party! It's time-consuming but well worth the effort when I hear the compliments from family and friends. To save time I just cut the chicken breasts to thin slices and marinate it a day ahead and cooked the stuffing too.
