Eggplant with Garlic Sauce

It's a good base recipe but the key for me is you need to cook down the eggplant. It definitely needs to be in semi-mush mode otherwise it tastes too "green". In the future, I will use more water or toss in a little salt at the beginning to get the eggplant to expel some water and cook it down. There should be a little left over water prior to throwing in the sauce ingredients. Otherwise it's too "dry". Based on what others recommended, I reduced the sugar to 1 tsp., used hot dried chili peppers and green onions. As well, I threw in 4-5 sliced fresh shiitake mushrooms. DH loved the mushrooms but didn't care for the eggplant! Will definitely be trying this recipe again!

Yogurt Biscuits

Relatively easy to make. I tastes pretty good but I really like the fact uses healthier ingredients. I switched out margarine for butter and milk for water. I made 2 batches. The first one was a bit dry so I added more yogurt and water in the 2nd batch. That really helped. In the future, I will double the recipe as it doesn't make a lot and as more effective use of my time.

English Toffee

I LOVE hard toffee. I used dark chocolate instead of milk. It was perfect but does take a long time to make. It took me a long to get the toffee temperature up to the "hard ball point". I believe around 275F. It was totally worth it.

Candy Coated Pecans

I have to agree with another review, they looked terrible... like something pooped on my lawn... BUT they tasted fine and my mother loved them! Actually, I had wanted "glazed" pecans. Oops!

Strawberry Jam

A great standard recipe to use with any types of berries. I made two batches. One with fresh organic strawberries and another with frozen organic mix berries (strawberries, raspberries and black berries). In both cases, I reduced the sugar to 3 cups and added 1 tsp. of butter to eliminate foam. After bringing it to a roiling boil, I reduced the the temperature and zapped it a few times with my hand blender to pulverize some of the fruit. Then I simmered until it reduced to a thick glazy sauce. Boiling it at too high a temperature creates tons of splatter and may burn the jam. In the end, mine set with no problems and tastes heavenly!

Zucchini Apple Bread

A VERY nice dense moist zucchini bread. Chopped the zucchini very fine and the apple into small chunks. Cut the sugar in half and used all cane sugar instead. Still can taste the sweetness but wasn't overwhelming. May consider substituting some of the sugar next time with stevia and using applesauce instead of oil to cut down on the calories.

Homemade Black Bean Veggie Burgers

MMmmmmmm~ tasty. I followed the advice of others and made some minor changes to the recipe... Used garlic powder instead of garlic (none on hand), halved the cumin and chili powder, and substituted a can of mushrooms (drained) for the green peppers. The final change I made was to use rolled oats that were pulverized in my chopper to mimick breadcrumbs. I added as much rolled oats to the mix that it could tolerate... my hands were sore from the mixing! Slapped the babies on the fry pan and it came out perfectly. Didn't fall apart at all~ This will definitely make it into our regular rotation in the future.

Chickpea Curry

Way too much cinnamon and chickpeas for my personal taste. Cut back to 1/2 tsp. Next time, will only use 1 can of beans but keep the rest the same. Took the advice and drained the liquid from the beans and substitute with approximately 2 cups of water. Added already cooked chicken. For some reason, my turned out a bit watery, so added a bit of cornstarch to thicken it up. Otherwise, tastes very similar to what i get in a resturant!

Chicken Wild Rice Soup I

The taste is incredible. The only problem is that it comes out way too thick. Heeding the warnings, I added extra chicken broth and used skim milk. Still came out like a stick-to-your-rib stew/chowder. Next time, i'll reduce both the amount of flour and rice to make it slightly thinner. Other changes: sherry -> beer , wild rice -> long grain.

Amish White Bread

As far as white bread goes, it's right on the mark. Prior to this, I never made bread successfully... now I know why, I never used nearly the amount of sugar seen in this recipe. If white bread is what you're after, this is the recipe for you. However, truth be told, given the 'health' issues surrounding white bread, I probably won't make it again.

Absolutely terrific. For the person who ask, it freeze well too! Although, I made the mistake of trying to make muffin batches out of it the second time around and left it in the oven too long. Came out on the spongy side... but I'm sure that was completely my fault.

Best Toffee Ever - Super Easy

It's as the title says, super easy. I slowly boiled it on low heat till it was a nice dark amber... but my thermometer didn't want to move to the proper temp until the very end! Had me a bit worried ^_^ Immediately poured and sprinkled on grated dark chocolate. I will never grate chocolate in winter ever again! After grating, it was statically charged to everything nearby including me! Created a super mess but, on the flip side, it was super easy to sprinkle on the toffee and then spread it when it had melted sufficiently. Either way, it tasted perfect. Wouldn't change a thing.

Banana Crumb Muffins

Husband loved it, particularly the crumb topping... I can't say much as I didn't taste it. So long as he likes it, that's enough for me. I just didn't like the fact that my whole house ended up smelling like bananas ^^

Cornish Finnish Michigan Pasties

Not a native yooper but have lived here for the last 5 years. This recipe is pretty identical to what I've tasted around here. In fact, it tastes better than what you get some of the resturants around here. Gravy or ketchup would help if it's too dry. Yes, there's definitely more filling that dough. And it does takes a whole morning to make. I didn't change a thing in the receipe. But a word of warning, this is not for the faint of heart... espcially if you're prone to heart attacks. A tad on the fatty side imo.

Strawberry Muffins

It was VERY good. I'd give it more stars but I changed added so much, I'm not sure that's how the original would have tasted. As suggested: I added 1 tsp. vanilla, a mashed banana (less on the oil), some quick cook oatmeal and more strawberries. It turned out great! But the muffin seemed to have a hard time holding itself together with all the excess strawberries. Anyways, a great basic starter recipe. Thanks!
