I'm 46, married to a wonderful guy who loves to be my food "guinea pig". He is rarely disappointed! I'm a published poet of rhyming verse and also write as a service for others. Some of them have even sampled my food creativity. I once fed the squirrels pita triangles with peanut butter and apples!

My favorite family cooking traditions
Multigrain pancakes for Saturday breakfast, or "what's-in-the-fridge" fritatas. Danish lunches with open-faced sandwiches and Tuborg beer and Aquavit. Indian meals for guests. (Accompanied by a box of tissues for the heat!) International themed dinners with my best friend and her husband.
My cooking triumphs
My homemade soups from scratch never fail to disappoint. A few really great Indian meals for friends, a chocolate-orange cheesecake garnished with chocolate dipped mandarin oranges.
My cooking tragedies
Potato pancakes with too much flour and not enough taste.

Italian Summer Squash Polenta Bake
Love this recipe! To simplify things and make this more quickly, I use a vegetable peeler to cut strips of both the carrots and zucchini, rather than slice them. I didn't have squash but decided to add sliced fresh mushrooms. I also used a can of diced Italian-style tomatoes, drained, fresh minced garlice and basil-polenta. This is only the second time we've ever eaten polenta, but it won't be the last!

Someone reviewed this below and said it is not Danish. I have to agree. My husband's background is Danish and we've never seen a Danish recipe like this, BUT, it matters not, because wherever this recipe originated, it is deelicious! I used ground soy meat instead of beef and added a can of diced tomatoes, used Danish Fontina cheese and it is a definite smash hit! Try it, you'll like it!

Lime Chicken Soft Tacos
This is a definite keeper! I used frozen cajun chicken breasts sliced and sauteed with the lime juice, subbed balsamic vinegar added the garlic and 1 Tbsp of red pepper jelly as well as some of my homemade cajun spice mix - added the tomatoes to the chicken in the pan and served the mixture in a tomato/basil tortilla with sour cream, chopped romaine and organic salsa and old cheddar, grated. Delicious! Thanks for the idea.
