Banana Yogurt Muffins

These were amazing. Made the following adjustments for a healthier version: substituted pastry flour for white flour (lower gluten), 1/2 c. applesauce for oil, and only 1/3 c. packed brown sugar. Also added 2 T. flaxseed, 1/2 tsp. cinnamon, 1/2 tsp. vanilla. Moist and full of flavor. They'll never know these are healthier.

Butter Roast Chicken

I used four split chicken breasts without skin. Soaked for one hour in salted water. Like others, cut butter to 1/4 cup and reduced lemon juice to 1/4 cup (you will never miss that butter!). Cooked in uncovered roaster at 325 degrees for 1 1/2 hours, basting occasionally. Very flavorful, family loved it!

Excellent Broccoli Cheese Soup

Vegetarians: I substituted vegetable broth for the chicken stock and it's excellent. Very flavorful - did not feel like a sacrifice. Like others, I sauteed finely chopped onion with butter and added a scant 1/3 cup of corn starch blended with cold water to increase thickness to our personal preference. Thanks for a great recipe!

Monterey Chicken with Potatoes

So good my husband called me to tell me it was amazing. Only changes: added 1/2 c salsa and 1/2 c cheeses to original recipe and then drizzled an extra tablespoon of lime over everything. Flipped chicken halfway through cook time and basted again. Definitely a keeper, thanks for sharing!

Broccoli Cheese Soup V

We love this recipe. Like others, I choose to use a mix of Velveeta and cheddar. This recipe makes a ton, so I half the recipe. Probably due to this adjustment, it sometimes turns out a little thin for my taste so I cut back the broth a bit.

Black-Eyed Peas and Tortillas

Simple, great recipe. I added an extra clove of garlic and omitted the vegetable stock. I think any stock would make this too liquidy. Serve with shredded cheese and sour cream.

White Cheese Chicken Lasagna

This is an excellent recipe I have been making for some time now. I use no-cook noodles to save time. To keep from drying out, I make extra sauce (add an extra tablespoon of flour or so and adjust broth/milk/cheese). Also, I prefer to shred the chicken which gives this recipe really great texture. This is a definite keeper in our house.

Lemon Chicken III

Followed other advice and marinated while frozen only a few hours. It was still far too lemony, but if reduced I am sure it will be a hit. Fried for about 5 minutes on each side and it did take all of 30 minutes to bake. Next time I will cut back on lemon and dilute with some water.

Spicy Rapid Roast Chicken

Like others I doubled spices and stuffed cavity with half an onion and two cloves garlic. My son said it was the best roast chicken he's ever had. Flavorful and very tender. Definitely a keeper!

Peach Cobbler VI

Very good and very easy to make. I sprinkled some cinnamon sugar on top just before baking. It took me 10 minutes longer to bake than suggested. This one went fast with my family.

Pumpkin Chocolate Chip Cookies I

These are truly amazing. Made a double batch and they were gone the next day...neighborhood kids devoured. Took others advice and substituted butter for shortening, reduced nutmeg to 3/4 tsp. And if you like nuts, definitely add the walnuts! Don't forget to grease cookie sheets. Off to make another batch now!

Banana Banana Bread

Very good. Like others, added cinnamon, vanilla, and dash of nutmeg. I'm a chocoholic so also added chocolate chips. Cooked for 55 minutes and was already overcooked by about 5 minutes, so watch carefully.

Blueberry Buckle

Yummy! I did not change amount of flour (spoon lightly), but did use others suggestions to include 1 tsp vanilla, and use half brown/white sugar for topping. With fresh blueberries cooked to perfection in 32 minutes. Great recipe.

Garlic Cheddar Chicken

I just have to review this one again. This is a family favorite...incredibly moist, perfect every time. Make sure you really drench the chicken in the butter mixture and the crumbs will stick beautifully - don't skimp on the butter. It's so tender you may not think it's cooked at first, but 30 min. always works perfectly for me. If you want, broil on low last 3-5 minutes (watch closely). With all the butter, never sticks to my pans...easy cleanup.
