Caramel Apple Bars II

Reviewed: Oct. 20, 2007
These turned out really good and I will make them again! I made a few changes. I took the previous posters advice and put 2/3 of the crust in the bottom of the pan and usd the remaining 1/3 on top instead of doing 1/2 and 1/2. That way, the bottom crust is sturdier and you can see the apples better which is more appealing to the eye. I only had one cup of caramel sauce so I just adjusted the amount of flour and it seemed to be plenty. I incread the apples to about 3 and 1/2 cups but I would still like more. I felt that the apple flavor got a little lost. I will try 4 and 1/2 Cups next time. Also, I used 2 Gala and one red delicious apple because that is what I had on hand, next time I will use Granny Smith for a tarter bite. All in all, very good recipe. Thanks for sharing!

Cowboy Oatmeal Cookies

Reviewed: Oct. 11, 2008
Really great! Exactly what I was looking for. I only had butter (no margarine) so I baked them about 10 minutes. They are nice and soft. I also added about 1/2 C raisins. Nuts would also be great. Thanks!

Sweet Potato Pecan Waffles

Reviewed: Jan. 12, 2009
Thanks for this great recipe! I made these to freeze for my 2 year old son & I so we would have waffles ready to go in the mornings for breakfast. I choose this recipe because i like to sneak in extra vegetables where ever I can! I used sweet potato puree that I made myself and I used 1/2 whole wheat flour, 1/2 all purpose flour. I also used 1/2 nutmeg and 1/2 cinnamon because nutmeg can be overpowering to me. These were really good. I gave them 4 stars because I thought they could have had a touch more sweet potato flavor but all in all, terrific! I will make them again!

Yogurt Chicken

Reviewed: Feb. 4, 2009
This is a really great, quick recipe! The chicken comes out so moist. I have used balsamic vinegar for the lemon juice when I was out of lemons. It turned out just as well. Thanks for sharing!

Easy Tomato Crab Soup

Reviewed: May 16, 2010
This wasn't bad but it wasn't great either. We had it for dinner but did not save the left overs. Maybe I would like it more pureed before the crab was added. In any case, the crab flavor was really overwhelmed by the tomatoes. I did add a bit of old bay seasoning (after making it as described and finding it a little bland) but it didn't do much for it. One nice thing about it - it is very quick and easy.

Best Ever Chocolate Cutout Cookies

Reviewed: Dec. 7, 2010
These were awesome! So tasty! They are like very rich brownie-cookies. I used Special Dark cocoa powder which made them darker in color and they had a dark chocolate taste. I had no trouble with the dough being crumbly. It mixed up very well and once it was chilled, it was easy to work with. I used cocoa powder instead of flour to roll these out and that worked nicely and the cookies looked neater with no white streaks. I did notice that if you make the cut outs too thick, they are more apt to break. I baked these for 8 or 9 minutes, then let them cool on the sheet for 5 minutes. I drizzled them with red and green confectioners glaze for christmas and it was very striking against the almost black cookies. The only change I made to the recipe was to add 1 tsp. of vanilla to the dough. Thank you so much for sharing this recipe - it will become a regular for me!

Gelatin Spritz Cookies

Reviewed: Dec. 7, 2010
Sorry, these cookies were not for me. The dough came together fine but the color was really unappealing. I used black cherry jello and while a different flavor of jello might give better color, the dough and the baked cookies had a very strange, artificial fruit aftertaste. I used regular jello, not sugar free so the aftertaste wasn't from a sugar substitute. I only baked one tray of these and then threw the rest of the dough away. I wouldn't serve these to guests and I didn't want to eat them myself either.
