Easy Morning Glory Muffins

Will definitely make these again! I followed others' suggestion and used less oil. I used 1/2 cup of oil and 1/2 cup of apple sauce. They tasted great. This recipe is a keeper!

Cherry Crunch

I stumbled upon this recipe when I was searching for a dessert recipe for a last-minute dinner (and I had a can of cherry pie filling sitting in my pantry for several months!). I was not disappointed! It was super easy to prepare and I assembled it several hours ahead of time and baked it once the main course was out of the oven. I can't wait to try this again with different pie filling flavours. It tasted great warm from the oven with some vanilla ice cream on the side.

Cranberry Swirl Coffee Cake

Fantastic! I found this recipe while looking for a way to used up leftover cranberry sauce. I was feeling chef-y so I added about 1/2 a tsp of finely-grated orange rind (also because I had some lying around). Didn't have almond extract so I used vanilla instead. Thanks for sharing this recipe, Laura! I will definitely make this again!

Garden Pasta Salad

This was a great basic recipe which I've made twice now using whatever veggies, pasta and dressing I happened to have on hand. I didn't use the parmesan and it still tastes great.

Potato Leek Soup III

It came out great! I will definitely be making this again. The changes I made were to use only 1/4 cup of butter to saute the leeks and I used 1 cup of half and half instead of the cream.

Quinoa and Black Beans

Yummy! I did find it a bit bland at first but it was much better with a dash of taco seasoning. I only used 1 can of black beans as other had suggested. 2 cans would have been waaaay too much! Tastes better the next day.

Oatmeal Peanut Butter Cookies

I made these with butter instead of margarine/shortening. They were nice and soft, even the next day. The flavour was good but these definitely aren't my favourite peanut butter cookies. Even with the addition of chocolate chips to half the batter, they were still so-so. My toddler really likes the cookies though and I like that the oats add some extra nutrition to the cookies.

Oatmeal Chocolate Chip Muffins

I agree with others that these muffins came out too dry and crumbly. I should mention that I used raisins instead of chocolate chips and added 1 tsp vanilla as other suggested. Otherwise followed the recipe exactly. Don't think I'll make these again.

Creamy Rice Pudding

Great recipe! Will definitely make this again and again. Only made 2 minor changes to the recipe. Left out the raisins because I didn't have enough on hand. Also, added a pinch of cinnamon as some others suggested. Many thanks for the delicious recipe!

Chicken Makhani (Indian Butter Chicken)

An alternative to try for vegetarians: instead of chicken use cubes of Indian cheese called "paneer". Paneer cubes can be found in the frozen sections of Indian grocery stores and many regular grocery stores. Simmer the paneer cubes in the sauce and the dish created is another East Indian favourite called "Shaahi Paneer".

Delicious Raspberry Oatmeal Cookie Bars

This is one of the easiest desserts I've made. Very simple to make but it tastes great. My kids asked for seconds. I followed the recipe other than adding 1/2 tsp of cinnamon as others recommended. I also lined the baking dish with parchment paper instead of greasing it.

Wow! Best carrot cake ever! Tastes great frosted or unfrosted. I followed the recipe exactly and it turned out perfectly. Next time I will try reducing some of the oil and replacing with applesauce.

Curried Rice Pilaf

Great recipe! I used 2 tsp of curry powder as others suggested. This ended up tasting like the right amount. Also followed others' suggestions and added the raisins to the rice/broth mixture so they would soak up the moisture and come out more plump. I will definitely make this again!

To Die For Blueberry Muffins

Thanks Colleen for the great recipe! As others suggested, I halved the measurements for the streusel topping and used brown sugar in the topping instead of white. Also used frozen blueberries because these were all I had. I wasn't sure how the muffins would turn out since the batter was so thick when I put it into the muffin tin but the texture of the muffins was perfect. Didn't do anything special with the blueberries either and they didn't end up sinking on me. Probably because the batter is so thick. I followed the muffin recipe exactly and it turned out 9 medium-sized muffins. Will definitely make these again!
