Easy Red Beans and Rice

I really liked this regardless of the authenticity of the recipe. I followed the recipe pretty closely, but added about 1 tbsp of creole seasoning and 1/8 tsp of red pepper. Used a 12 ounce turkey kilbasa and one whole tetrapack of Pomi chopped tomatoes. Didn't have green pepper so I used a red pepper, also had only one can of red kidneys so for the second can, I used white kidneys. Colorful, but I also put the whole thing over brown rice. My family and I really enjoyed the taste and I will probably make this again and experiment with other favors and seasonings.

Best Chocolate Chip Cookies

I am frustrated by this recipe. I have made it several times over the years. The cookies taste great, but they always come out the same way, very flat. I follow the recipe ingredients, have chilled the dough, use high quality cookie sheets, oven heats to correct temperature. I do not make them large, probably about a tablespoon size. I would really like them to look as pretty and fat as some of the photos I have seen here, but not sure what to try. Any advice?

Acorn Squash with Apple

This is a fabulous recipe. I find myself making it weekly. Thank you so much for posting it. I omit the walnuts and add 2/3 cup of dried cranberries and 1/2 cup unsweetened applesauce.

Easier Chicken Marsala

This is a very tasty, easy and quick recipe. I usually omit the wine, just because I rarely have it and substitute chicken broth. I up the liquid, because it cooks down so much, you really need more.

Fish Fillets Italiano

This is a great recipe that you can really do a lot with. I used tilapia and omitted the olives. One night added some fresh green beans, another night added a little tomato sauce and topped with a little feta cheese.

Pumpkin Raisin Scones

I liked this, but had a hard time making 36 servings - I got to 24 servings. It is definitely more like a muffin than a scone. I substituted Splenda for the sugar and used equal amounts of raisins, dried cranberries and dried chopped apricots.

Irish Soda Bread

This recipe is so delicious, I have made it twice in the last three weeks. Instead of 3 cups of raisins used 1 cup raisins, 1 cup dried cranberries and 1 cup chopped dried apricots. The most recent time, I substituted Splenda for the sugar without any real change in taste. I also divide it into 16 servings rather than 8. At that rate it's about 175 calories a slice and not bad for a mid-morning snack.
