Baked Teriyaki Chicken

I have made this several times as written. We love it. I think it could easily be used on other kinds of meat or fish. The only difference is that I do not cook the thighs so long. They only need about 45 minutes.

Chicken Pesto Pizza

Made this with the addition of baby bella mushrooms, and using my own dough recipe. I cut the artichoke hearts into quarters. Cooked some Market Day chicken in the skillet with salt and pepper, then sliced it for the pizza. Delicious..

Satiny Chocolate Glaze

I use this recipe all the time, especially over brownies with toasted walnuts on top. I recently put it on a chocolate cake covered with a caramel topping, and drizzled this on top (also with nuts). So versatile and delicious.

Turkey Veggie Meatloaf Cups

My family enjoyed these (my, my husband, 9 year old and 1 year old). The mix was runny but the meatloaf did not come out runny after it was baked. I added salt and pepper to the mix, and I filled the muffin cups to the top and baked for 30 minutes.

Chicken Noodle Casserole

This was exactly what I needed to make something out of what I had at home. I used poultry seasoning instead of savory, and I think next time I will stick to a touch of basil or oregano. I wasn't thrilled with the poultry seasoning as it gave it a bit of a tang I wasn't crazy about, but the family liked it. I added frozez peas and corn, probably about a cup each. It was a bit runny, but that could have been due to the frozen vegetables or the fact that I was a bit short on noodles.

Super Sausage Gravy

Delicious! I made it exactly as written, and I loved it. It was full of sausage, which I prefer. If you like it a bit light on the sausage, then only use 1/2 lb. sausage or double the milk and flour. This is such a simple recipe too.

Broccoli Soup

This is a great soup. I wanted broccoli soup but I didn't want to have to use milk so my 8 month old baby could eat it too. This was perfect! Using the potato and pureeing it make it very smooth and the result was better than I expected. However, if you are looking for that milky, creamy texture, it is not like that. You can tell it is pureed potato, but it is smooth and delicious. I added a couple of stalks of celery with the onions and garlic and an extra potato. Because of that I had to add an addition cup of broth.

Hearty Ham Pie

Tortellini Soup I

Whole Wheat Chocolate Banana Bread

I just made this bread and my 8 year old daughter and I can't stop eating it. I only changed up the spices a bit. I like cloves but less nutmeg, so I put in 1-1/4 tsp. cinnamon, 1/4 tsp cloves, and 1/2 tsp nutmeg. I made it in a bundt pan and baked for 30 minutes and it was perfect! Thank you! What a treat!

Avocado Quick Bread

I really enjoyed this unique bread. I used a bundt pan and baked it for 50 minutes, though it could have come out a few minutes earlier. I used walnuts instead of pecans, and did not put in the raisins, but it would have been wonderful with them. I also did not have allspice so I used extra cinnamon, and a bit of cloves, nutmeg, and ginger. My husband loved this bread. I bet it would be great as a cake with cream cheese frosting. I had been looking forward to baking this bread for awhile, and actually bought the avocados just so I could do it. I will be making it again.

Chocolate Meringue Cookies

I really love these. I didn't get fancy or anything and I still really loved them. I did put them in the oven at 250 degrees for an hour as others suggested, and some were still chewy, but I really like them that way. I doubled the recipe and also doubled the cocoa. Yum!

Spinach Tomato Tortellini

My family really loved this dish. I used fresh tomatoes, 1/2 small onion and extra garlic sauteed in olive oil, rather than using a can of tomatoes. I also added some Italian Sausage, which I highly recommend. Delicious!

Scrumptious Frosted Fudgy Brownies

I struggled with what to give these brownies. I followed the recipe exactly. They are extremely rich. A small, bite-size piece is enough. We are dark chocolate lovers and they were still a bit much when it comes to richness. I did appreciate the icing and will likely use it again on another brownie or a cake recipe. This recipe is worth trying if you like rich, heavy brownies.

Enchilada Casserole III

This casserole was very good. I added a can of chopped green chilis and onions while cooking the meat, and I used extra cheese. My only problem was with the sauce. I made 2 packages of enchilada sauce and still ran out, and the casserole tasted like it could use some additional sauce. Next time I will either fix the enchilada sauce the traditional way or add more water with it. In either case, I will have a 3rd sauce packet ready. And I may try refried black beans next time. I will make again.

Grilled Sausage with Potatoes and Green Beans

My grill was out so I tried to follow the recipe, but in the oven. Apparently I'm not very good with aluminum foil, so I ended up dumping it into my stonware 9x13 pan and covering it with foil and it turned out so comforting and delicious! Definitely a keeper.
