Grilled Marinated Shrimp

Yum! I almost left out the tomato paste b/c I thought it would be weird, but I'm glad I put it in, it brought the flavor up a few notches! I cooked them in a pan since I don't have a grill, and it turned out nice. Next time I will cut back on the oil to 1/2 or 3/4 C since I didn't grill them.

Truck-Stop Buttermilk Pancakes

I've made these twice now. I leave the butter out and use about half cake flour / half reg flour. (i cut the recipe to serve 4 and sub 2/3C of flour for cake flour.) I dropped frozen blueberries straight into the batter on the griddle. First time I made these, I used store brand frozen berries which tasted good but not all that. Then I decided to do a taste test on the second batch and the extra cost of the premium brands is well worth it.

Fabulous Fajitas

Who knew that a packet of italian seasoning makes for great fajitas? I marinated my sirloin in lime juice, olive oil, fresh minced garlic, and the packet all day. Seared then cooked on med-low. Fabulous.

Texas Ranch Potato Salad

SO good!! But okay, I modified b/c I didn't have bacon on hand. SO, I cut a few tbsps of the mayo and replaced it with deli mustard. Then it was a little mushy and lacking in texture so I added dill relish. Can't wait to try it with bacon!

A Good Easy Garlic Chicken

Man! This was great. I pounded out the breast first. Did evoo instead of butter, added a splash of lemon juice and fresh parsley at the last 5 minutes of cooking. Sometimes the best things are the simplest!

Chocolate Trifle

I used 1/2C of coffee instead of water in the pudding, and whipped 1/2 pint of cream to mix into the pudding mixture. Used a chunk brownie mix, and this turned out decadent! It had about 10 hours in the fridge before serving, but it was better the following day. I suggest making it a day ahead. Also, it was very sweet, I couldn't imagine making the whole thing with cool whip. Next time I make this I'll mix in real whipped cream with cool whip for the white layer to take the sugary edge off. Great recipe, it's a keeper with those modifications.

Best Big, Fat, Chewy Chocolate Chip Cookie

I have finally found the CCC recipe I will always use! Used margarine instead of butter. Update: put roll of dough in fridge and made another batch three days later - still so good my husband asked if I put crack in them. LOL! Update 2: I've made these several times now. Mine turn out softer and stay softer if I use room temp margarine instead of melted.

Brooke's Best Bombshell Brownies

So yummy! Next time I will cut back on the sugar about 1/4 C. I added about 2 C mini semisweet chips, maybe this made them sweeter, but I like a lot of chocolate chips in my brownies.

DO NOT let them cool on parchment paper as one reviewer suggests...you can guess what happens, lol should've known...Other than that, these were great! I lessened the water and sugar by about a tbsp and added a tbsp honey. Excellent.

8 hours on low in the slow cooker and used about 4 cups of better than bullion broth And just fyi always soak beans overnight. As a general rule, with beans the longer they soak and/or cook, the less gas there'll be. And you know what I mean!
