Buffalo Chicken Wings I

Watch the butter. Doubled the sauce and I still don't know how the wings are supposed to "simmer". Best thing to do is let sauce simmer on its own while you fry the wings, then shake on the sauce in a container or bag. Ours were greasy and soft. But the sauce definitely is good. Husband added horseradish and Sriracha hot pepper sauce (found in the asian section, the one with the rooster on it--SO spicy). We loved the sauce.

Grilled Marinated Shrimp

Yum! I almost left out the tomato paste b/c I thought it would be weird, but I'm glad I put it in, it brought the flavor up a few notches! I cooked them in a pan since I don't have a grill, and it turned out nice. Next time I will cut back on the oil to 1/2 or 3/4 C since I didn't grill them.

Truck-Stop Buttermilk Pancakes

I've made these twice now. I leave the butter out and use about half cake flour / half reg flour. (i cut the recipe to serve 4 and sub 2/3C of flour for cake flour.) I dropped frozen blueberries straight into the batter on the griddle. First time I made these, I used store brand frozen berries which tasted good but not all that. Then I decided to do a taste test on the second batch and the extra cost of the premium brands is well worth it.

Best Big, Fat, Chewy Chocolate Chip Cookie

I have finally found the CCC recipe I will always use! Used margarine instead of butter. Update: put roll of dough in fridge and made another batch three days later - still so good my husband asked if I put crack in them. LOL! Update 2: I've made these several times now. Mine turn out softer and stay softer if I use room temp margarine instead of melted.

Blue Cheese, Bacon and Chive Stuffed Pork Chops

You **have to** make mashed potatoes and make gravy with the drippings. Phenomenal. To the drippings add 1 or 2 tbsp flour, and about 1/4 c. water or broth. Mmm-mmmm.

Grandma's Lemon Meringue Pie

I left out the butter and the taste and texture is perfect, especially the next day. I gave it four stars b/c it did not yield very much filling. It barely came up an inch into the pie pan! ?! I guess I'll just double it next time. Also, I'm not sure why the description of the recipe mentions lemon rind but the recipe itself calls for lemon zest. Of course you use zest, but I think some people may be using the rind or pithy white part - don't do this! it'll be bitter. You want to scrape the lemon to just remove the colored part and stop as soon as you see white.

Meringue II

I followed the recipe to a T but it still had dew on the top the next morning. The taste made up for it though, it's like toasted marshmallows. Topped Grandma's Lemon Meringue pie.

Baked Brie in Puff Pastry

I found myself asking why do this when you can buy it already covered in pastry and just heat it up? It didn't taste any better - I wasn't impressed. Gave it three stars b/c I guess not everyone has pastry covered brie ready in their local grocery store.

Broccoli Cheese Soup III

I chose this recipe because it didn't have process cheese (yuck). But, the recipe as it is was too thin. AND I cut a cup of broth and a cup of milk. Who likes broccoli cheese soup this thin? It was a disappointment but a good starting point. Next time i will try splitting the recipe and cutting the broth/milk, and adding an extra 1/2 cup of cheese.

Baker's Secret Pie Crust

This crust was excellent. Very flaky and buttery. Too bad my apple filling didn't quite cook all the way. I was ticked - the filling didn't deserve the crust! And after all that hard work!!!

Seasoned Turkey Burgers

These were juicy for a turkey burger. I had to add bread crumbs b/c the mixture was too mushy to form into patties. The onion flavor may be a bit overpowering for some. Next time I will take out some of the onion mix b/c it was on the salty side. Then again i was shy of 1 1/2 lbs. I just had one for lunch, and took it right out of the freezer and put it in the pan! I cooked in on the stovetop (electric) at heat 4 for about 7-8 minutes each side with a little bit of veg. oil in the pan.

Key Lime Pie IX

Better than the recipe from the back of a Key West Key Lime Pie Co. lime juice bottle I bought in, you guessed it, Key West. But still wasn't as good as the pie I had there... Anyways, I added some zest to make it less sweet but my husband said it made it a little bitter. Just a preference thing, I guess.

Fettuccine with Sweet Pepper-Cayenne Sauce

tried this twice now. The cayenne taste is good with the bites with bell pepper. But really the sour cream needs to be added at the last minute as another reviewer suggested, b/c I think the sauce was bland/flat by simmering with sc. I had to add a few spoonfuls of cornstarch to thicken the sauce the second time I made it, and there was too much parmesan taste and richness the first time I made it. So I reduced the amount the second time.

Eggplant Parmesan I

My first attempt at this dish was a success! I added a packet of Boboli pizza sauce to the a small jar of Prego and omitted the ricotta (I'm not a fan). I left the tops without sauce and it was crispy on the edges and tender on the inside. Yum!
