So yummy! Next time I will cut back on the sugar about 1/4 C. I added about 2 C mini semisweet chips, maybe this made them sweeter, but I like a lot of chocolate chips in my brownies.

Simple BBQ Ribs

Fabulous! I boiled for 45 min then cooked at 350 for one hour. Used Stubb's Mesquite sauce, and added about a tbsp of honey to make it stick to the ribs better.

Ultimate Shrimp Scampi

Tia was really good, but you need to add the parsley the last minute of cooking. It wilted and didn't add much, I figured this would happen but I've never made scampi before so I thought I'd follow the recipe. Also, this was begging for fresh sliced mushrooms, maybe I'll try adding crimini mushrooms next time. Yum!

Chocolate Trifle

I used 1/2C of coffee instead of water in the pudding, and whipped 1/2 pint of cream to mix into the pudding mixture. Used a chunk brownie mix, and this turned out decadent! It had about 10 hours in the fridge before serving, but it was better the following day. I suggest making it a day ahead. Also, it was very sweet, I couldn't imagine making the whole thing with cool whip. Next time I make this I'll mix in real whipped cream with cool whip for the white layer to take the sugary edge off. Great recipe, it's a keeper with those modifications.

A Good Easy Garlic Chicken

Man! This was great. I pounded out the breast first. Did evoo instead of butter, added a splash of lemon juice and fresh parsley at the last 5 minutes of cooking. Sometimes the best things are the simplest!

Texas Ranch Potato Salad

SO good!! But okay, I modified b/c I didn't have bacon on hand. SO, I cut a few tbsps of the mayo and replaced it with deli mustard. Then it was a little mushy and lacking in texture so I added dill relish. Can't wait to try it with bacon!

Fabulous Fajitas

Who knew that a packet of italian seasoning makes for great fajitas? I marinated my sirloin in lime juice, olive oil, fresh minced garlic, and the packet all day. Seared then cooked on med-low. Fabulous.
