Chicken Enchiladas II

These are pretty good! I switched the cream of mushroom for the cream of chicken and did half flour tortilla and half corn. I prefer the corn.

Ranch Chicken Tacos

VERY VERY GOOD! My new favorite taco! The only thing I did different was to pan cook a few chicken breast with some taco seasoning on them and shred them up. The rest was the same! I LOVE these and will be making them often! They are also great for not having to use the oven in this Texas Summer Heat!

Chocolate Banana Bread

This recipe is excellant! I halved it b/c I only had 3 large bananas and only needed one loaf. The only other changes I made was to use 3 T of cocoa for a chocolatier bread and add 1/2 tsp cinnamon. This bread is AWESOME!

FANTASTIC! I used olive oil instead of butter and added a teaspoon each of garlic powder and italian seasoning and 1/2 c parm cheese. EXCELLANT FLAVOR!

Lemon Cream Cupcakes

LOVE LOVE LOVE these cupcakes! I changed it just a bit. I used 1/2 greek yogurt instead of all sour cream and with the icing, I made lemon cream cheese frosting! TO DIE FOR!

Caramel Frosting I

followed the recipe exactly and used it as filling on a butter pecan cake. It was DIVINE!!! The icing did get hard pretty quick, so I microwaved it a few seconds and it was spreadable. It only made enough to fill one layer though.

Apple Cake III

I really like this, but I change it up. I add in a box of instant butterscotch pudding to the cake and apples. I skip the butter and nuts on top and just sprinkle it with brown sugar and cinnamon. It's SO moist and tastes even better the next day.

Chicken Fiesta Salad

I loved this, very flavorful and healthy! I added a few baked tostitos and a sprinkle of fat free cheese along with a little cilantro. I will be making this again and again!
