Zucchini Cornbread Casserole

Fabulous way to use extra zucchini, and that cornbread mix in your cupboard. Great flavor, too. Not too heavy. Excellent side dish! I've made this several times already and it's made it into my "fave allrecipes.com recipes" collection. =)

Peanut Butter Thumbprint Cookies I

I'd give this recipe 10 stars if I could. What a fantastic idea! I've renamed them 'PB&J cookies'. They actually taste like a bite of a peanut butter and jelly sandwich. I have no idea why other reviews were so bad. 'Cardboard' taste? Hardly! They're perfect. I also filled some w/melted chocolate. 'Reese's cookies'. A new tradition for the holidays!!!!

Lemonade Pie III

Yeah, don't know where you can find a 6oz. can of lemonade...so I just got the 12oz. and split it. Make sure you use a good quality crust. You can ruin this pie if you skimp on the crust quality..i.e., generic brand. Very tasty, otherwise! Like lemon ice cream!

Tiramisu Cheesecake

I really had high hopes for this recipe. I'm being generous with 4 stars. The flavor of the filling was good, and quite true to 'tiramisu'. However, the crust was a huge disappointment...especially after all that work to crush the ladyfingers! You DEFINITELY need more butter in the crust. And baking time is WAY too short. Even after adding 20 min. bake time, it was still gooey in the middle. Sigh. I'll try again with modifications.

Molasses Bran Muffins

Great tasting, healthy muffins! I used whole wheat flour instead of white...for a little extra health kick. Very moist! Also, not too sweet. Of course, it's probably because I forgot to add the raisins/craisins before baking and the recipe doesn't remind you to add them to the batter. Still yummy, though!

Peanutty Sauerkraut Coleslaw

Umm....I really want to rate this recipe highly, but just can't bring myself to. It's quite the strange combo of ingred's, and I'm an adventurer when it comes to food. But this was just...a little too sweet, & too weird. You definitely don't need the extra sugar. Yogurt & peanut butter are already sweet enough. I'll be looking for other ways to use wheat germ. Sigh.

BLT Dip

Great, tasty, easy recipe! Although, it should technically be called "BLT dip withouth the L". =) I actually thought it would be kinda blah. But the group I made it for loved it. Great with Ritz crackers. And you could always sprinkle chopped lettuce on top for you BLT purists out there. =)

Simple Tiramisu

Great taste, and easy! However, if you follow the recipe exactly, you don't have layers of ladyfingers alternating. It's just a 'crust' of them and the filling on top, which makes for quite an imbalance. It's a LOT of filling to a little bit of ladyfingers. I'd recommend layering....like true tiramisu.

Very Simple Spelt Bread

This was a tasty,healthy bread. I've never made anything w/spelt before and it was definitely worth trying. Tasted quite 'sesame-y'. Baked beautifully and nice to have a bread without needing yeast. The extra tin on top DID develop a nice crust. Thanks!

Cream Cheese Brownies

This was a great way to use a boxed brownie mix...and for something quick. Like a youth function, or sunday school treat. I did NOT frost them. Wow! Can't imagine the sugar overload if I had. They don't need it. They are pretty basic, though, in taste. You could definitely 'kick it up a notch' by adding espresso powder or..cinnamon (yum!) to the brownie batter. Thanks for a great recipe to grab in a jiffy!

Dinette Cake

Blah. Methinks ya gotta have more than 1 egg to have a decent cake, no matter how small the pan...or kitchen.=) Just too dry. Even with the strawberry sauce I served it with. Disappointing.

Acorn Squash Soup

This is FANTASTIC! So tasty, so pretty...and so easy! It was quite impressive to dinner friends. I'm waiting for a bowl of it to cool on the stove right now. If you like tasty soups, you'll LOVE this.

Lumpia (Shanghai version)

I'm by no means a Filipino cuisine cook, but I had some wonton wrappers to use up. I know this recipe calls for spring roll wrappers but....why not? These were good, though greasy. Maybe the wrappers aren't recommended due to the amount of grease they soak up. Anyway, worth trying!

Dill, Feta and Garlic Cream Cheese Spread

Very strong feta taste, but very good, if 'strong' is what you want. I served this in a hollowed out round squash and it was quite a wow-getter. =) Don't we all want that? I used 2 tsp dried dill and it worked great.

Decadent. Perfect for anything needing a serious chocolate blanket. Tasted yummy w/out brandy. Don't do alcohol. Beware of a spoon with this stuff on it. =)

Chicken Salad in the Tropics

Weird. Just plain weird. The dressing seemed to lack something...and it had a lot of ingred's! Dunno. I'm into different tasting food, but this just lacked. Will try other ways to use mangoes.

Pumpkin Spice Cookie

I'm always looking for easy, shortcut recipes. This definitely fills the bill. However, cookies aren't great. Kinda rubbery. They were good when I added choc chips and frosted w/cream cheese frosting. A good starter for a quick recipe.
