Pumpkin Pie Bread Pudding
Thanks so much for the raisin tip! I had really old raising and the extract/microwave trick revived them completely! I used about a cup of raisins, and 2 t. maple extract. I only had about 1/4 t. of rum extract on hand. I enjoyed the lasting maple flavoring on the raisins. In terms of other substitutions: pkg of 12 hot dog buns for french bread; half & half for milk; no pumpkin; no molasses; nutmeg for allspice. I also threw in 1/2 c. of cinnamon toast crunch to put over the top.

Garlic Grits
Baking time was 50 minutes, plus 10 minutes under the broiler. I love regular grits but had never tried them baked/as a casserole. I thought they were just okay but hubby liked them (he doesn't like regular grits).

Spring Pea Medley with Edible Bowl
I made this as directed except I used frozen peas that I added frozen so they'd stay crisp. The sweet onion gave the dish a nice flavor without being as strong a typical onion taste. The dish didn't sweep me off my feet, but it's a nice sort of "backup singer" for a stand-out main dish.
