Easy Pasta Primavera

I read the reviews that said this was bland and boy were they right. I even added extra spices to give it flavor, but nothing could help. It tasted like spaghetti noodles in chicken broth. I was embarrassed to make this for company! I kept apologizing for how flavorless it was.

Grandma's Sloppy Joes

This is okay, but not great. The cloves are a bit much. Another reviewer posted a simpler version and I liked that so much more. I think the simplest way to make sloppy joes is just to brown a pound of beef and an onion, add tomato sauce or diluted paste, little brown sugar, little mustard and chili powder. I just taste after each addition until it is perfect.

Potato Ham Bake

I made this and sent the leftovers with my son to the babysitter. She tasted it when she was feeding him and asked me for the recipe! This is one of my regular recipes now. It is great for when we're having company because I just prepare it all and pop it in the oven. The only mistake I've made before is not slicing the potatoes thin enough. The thinner the better! Also, don't try to cook this at a higher temp for less time. Those potatoes need a long time at a low temp. This is yummy!

Chicken Stir-Fry

I just have to say that when I was about to buy the bottle of soy sauce to make this recipe I noticed a bottle of stir fry sauce next to it that was actually cheaper than the soy sauce! This recipe is good, but for the time it takes to assemble the sauce yourself just buy the premade sauce! You don't have to worry about accidentally getting too much or not enough of any seasonings and it is so much faster.

Corn Noodle Casserole

This is a good meal for a night when you don't have time or energy to make anything complicated. I use whole wheat pasta and add some more veggies to make it a little more nutritious. My toddler loves the simplicity of this and my husband will eat it too. It's nothing gourmet but definitely good, weeknight comfort food.

Herb Roasted Pork Loin and Potatoes

This is a great recipe, especially for a larger group. The spices are just right and the tenderloin is very juicy. This recipe impresses people but it is so easy to prepare!

Tomato Spinach and Bean Burrito

I love this recipe and I make it quite often. It is full of fiber and protein and the tomatoes and spinach add some nutrients. I do add ground beef or turkey to this to make it a little heartier.
