Texas Cowboy Chili Beans

Beans didn't get nearly soft enough, but wow was that meat delicious! I may just use the first part of this recipe for my chucks from now on. Falling apart tender and flavored deliciously all the way through. I almost ruined my dinner by snacking on it as I was shredding.

Chicken Vegetable Rollatini

Chicken and rice inside chicken were exceptional. Meat and rice moist and tasty. Rice with spinach was a bit too spinachy, but maybe that's just my taste. A lot of work, but I might do it to impress some friends one night.

Double Tomato Bruschetta

This is absolutely delicious! My kid requested we have it again, for the 2nd night in a row. The second time I added chopped mushrooms and topped with Asiago cheese. Just as yummy!

Milk Tart

This is excellent! I was lazy and dumped it into a store bought crust with good results. My only complaint is that it's so airy and yummy, that you can eat the entire tart in one sitting. I ladled a little bit of a sweet cranberry sauce (fruit pie filling type) over a couple pieces for a bit of zing - also tasty.

Stuffed Peppers My Way

Not only crazy-yummy, but very pretty, too...especially the yellow peppers. These would be a 4.8 or .9, as I made a couple minor changes to add flavor. I added some bullion when I cooked the rice, which was brown rice, and used parmesan instead of feta, as it was what I had on hand. I also added some diced mushrooms. Delicious! I agree that the rice is good enough to eat without the peppers. Great recipe!

Chicken Tortilla Soup I

I'd give this a 4.5 if I could. I followed the advice of several reviewers to add more broth, which I definitely recommend. I kept a big measuring cup full of my bouillon mix next to the skillet, and added as it cooked down. Came out very tasty, and the toppings definitely make the dish! Thanks for sharing this easy and filling recipe!

Roasted Vegetables

Not bad at all. I agree that it's a good basic recipe and can be used with any combination of veggies. I didn't think I would like the sweet taste of the sweet potato, but it contrasted very nicely with the rest of the veggies. This has become my new "staple" recipe for dealing with odd and end veggies in the fridge.

Scottish Oat Scones

Not bad at all. Quite good with butter and jam. I followed the suggestions to soak the oats in a bit of milk and add cinnamon and nutmeg. I used a spoon to brush the tops of the 2nd batch with honey and let them sit overnight. This was very good the next morning with hot tea.
